Eat at home

I am making chicken and noodles for dinner tonight. I got a whole fryer chicken for $.79lb earlier in the week from Save-a-lot, so I cooked that over night in the crock pot with a bunch of veggies. Today I am taking it off the bone and simmering it with the broth, carrots, celery and will add noddles in last minute. I plan to thicken it up and serve it with roasted brussel sprouts and biscuts on the side.

Tonite we are having eggplant parm and pasta with garlic bread.
Tomorrow Roast chicken, baked potato, green beans
Tuesday- Hot dogs with fries
Wed. chicken pot pie if I have enough chicken left over
Thursday- Pancakes
Friday- Baked Tilapia and rice

Hey I don't even have to go grocery shopping!

I went grocery shopping yesterday. I spent a bit over my budget. I wanted to spend around $60 but ended up spending $82 and saving $39 in coupons. I also got $10 off instantly off at checkout for buying 6 General Mills Cereals and earned a free milk for next time.

I got 50 bonus box tops for my DD's school too! If you bought three Grands rolls you got free eggs. And if you bought their meal deal which was boneless skinless chicken breasts you got free carrots, onion, and shrooms. On top of that it was double coupon day so I saved another $10.00 there getting a whole bunch of pantry items for little to no cost.

So the plan at least til Wednesday is:

taco salad over tortilla chips and with french dressing
Tonight Reubens with the left over corned beef
biscuit and chicken pot pie
speghetti
oven fried baked tilapia
arroz con pollo or tortilla chicken soup
bubble pizza made with biscuits
sausage gravy over biscuits maybe a breakfast for dinner at the end of the week
chicken picata

homemade shamrock shakes.. I didn't get to have one at Mickey D's
rootbeer cupcakes
 

WOW, so nice to find a group of people that actually eat at home. My friends think we are "weird" because we eat at home most nights, while they all eat out most nights. I am amazed they can afford it...

I get up most mornings pretty, early so I can prep most of the things I need for dinner (I hate coming home tired and trying to cook)...Here is our menu for this week!

Sunday-Grilled Country Pork Ribs (Happy Spring, the weather is perfect for dh to grill), baked potatoes, broc-pineapple-raisin slaw, french bread
Monday-Taco Night (ds#1 has guitar practice til 5 pm and dd has track practice til 5:30)
Tuesday-Swedish Meaballs
Wednesday-Sloppy Joes (Church Night and Violin after school)
Thursday-left overs (track meet)
Friday-Church Fish Fry
Saturday-dh has to decide...I have an all day scrapbook crop

This week I have nothing to post, because my husband and children are away :sad2: but we've recently made a change to eat at home every night.

It was amazing how much we spent on eating out - after changing that and a few other things, my husband was able to quit his job (we only saw him 6 days per month when he was working). Eating at home is totally worth it!!

Mon- corned beef, cabbage, teeny tiny potatoes
Tues-Tacos
Wed-Chicken thighs and???
Thurs-Spaghetti
Fri-dinner out DS 17th birthday

Tonight - bbq chicken, cornbread, broccoli, cut veggies
Tomorrow - leftovers (everyone's going in different directions)
Tuesday - steak!, homemade bread, salad
Wednesday - bacon, pancakes, fruit salad
Thursday - hamburgers, salad, couscous
Friday - fish, rice, green beans

And I have to brag. I've been trying to make my boys create menus for food that they will eat, are on sale or are inexpensive and use some of the food we've got at home. My 15 year old made this one. :)

We have been doing pretty good here on not eating out for lunches which was my next goal to work on. I think the last time we had lunch out was last tuesday when I picked up food for my mom and I after her eye surgery.

This week's menu is......
Tonight- Leftovers
Tuesday- Pork chops with mashed potatoes and corn
Wednesday- Lemon chicken cutlets with rice and a veggie
Thursday- Crock Pot ham with hashbrowns and a veggie
Friday- Macaroni and cheese
Saturday- Steakhouse salad
 
Tonight I am roasting an Oven Stuffer Roaster which will yield tons of leftovers (YAY) with mashed taters, and yellow and green string beans.

What is your favorite recipe that uses leftover chicken? Please share...
I am always looking for ways to "brighten" up leftovers with totally new dishes.

Oh by the way, it's snowing here in NY :confused:
 
I had family in town this past weekend, so I didn't really get to use some of my meals. On the up side, this means a cheap week at the grocery and a really easy meal plan for this week. It also means that I have had time this week to really look into what I can do to now lower my eating out costs for lunch and figure out a plan for eating breakfast.

So, my dinner plan for this week is (in no real order... some depends on how the weather is!):

Tonight is Hamburger Helper as I have class 7pm - 10pm
Hamburgers on the grill with Corn on the Cob and Fruit Salad
Waffles with Strawberries and Whipped Cream and Sausage
Basil Shrimp Skewers, Grilled Vegetables, and Tomato and Cucumber Salad

I will be making extra Hamburgers to freeze to keep on hand for lunches. I also am planning to make some more waffles for a quick breakfast on mornings I don't have time to make something then and there.

Also, I am thinking about making a frittata with some of the left over grilled vegetables to eat for breakfast. I figured I could make it one day and then keep extra pieces to eat later in the week with some fruit and toast.

Does anyone here have a good and easy frittata recipe?

leftover chicken ideas

I made this last week and it was lunch all week long and delicious!!

I just sauted up some onion and garlic in a little olive oil. Then added some chipolte peppers cut up (about a tbsp.) add 2 big cans of the big tomatoes- I used chopped and crushed - a can each. I let that simmer a bit. I added some cayenne. Then I added in the chicken chopped up- simmered a bit longer

Served it topped with cheese and home made tortilla strips. mmmm. spicy and yummy.

I also do Chicken Enchilladas, Chicken pot pie, Chicken into pasta salad. The list goes on and on.
 
Dh does the cooking for the kids from Mon-Thursday( I don't get home from work until nearly 9pm) so I asked what he may be preparing and below is his list of possibles:

Mon- chicken parmigiana( from yesterday's sauce and the chicken cutlets I make and individually freeze for his convenience) and salad
Tues- hamburger helper
Weds- he's dd10's coach & they have soccer practice at 6:30 so either frozen pizza or fast food.(depends on HW and when he gets off work)
Thurs- baked chicken, salad and rice a roni.

He does ok, doesn't he?:love:

Friday- I'll make slow cooked ribs, baked potato pie and corn
Saturday probably grilled steaks and salads
Sunday is always pasta & meatballs w/ homemade sauce- I was raised italian and that's just our tradition. Plus it leaves sauce for DH to use during the week for easy meals.
 
Changed our minds and made the lemon chicken cutlets tonight. The lemons we bought needed to be used up so instead of wasting them I just moved our menu around.
 
Tonight we had "Burritos", except we overfilled they became "Piles of stuff on a flat tortilla" instead. Still quite yummy.

We had whole grain tortillas, brown rice with peas and corn mixed in, cut up tomatoes, spicy quacamole, wilted spinach, tilapia cooked with lime and garlic, and plain yogurt.

On the side we had fresh strawberries.

I cooked up a bunch of homemade chicken nuggets tomorrow. I think we'll have them on a bed of baby spinach, with grapes on the side.
 
leftover chicken ideas:

Cut up small, toss with a mix of buffalo chicken sauce and blue cheese dressing. Serve on a bed of baby spinach, with cucumbers. Yummy!

Chicken fried rice (I usually do 1/2 fried rice 1/2 fried cauliflower with lots of peas and carrots added)
 
Yesterday I was in bed all day with the stomach flu not fun:sick: so my hubby went food shopping and really I don't have a clue on what he bought. :confused3 he did try though. He made Mac and cheese last night and tonight looks like hot dogs.

Tonight we are having leftovers that we did not have last night.
 
Mix together mushroom soup (fat free) one can of garlic mushroom soup, just enough milk to make the soup liquidy.
Place chicken - doesn't matter what parts- into a cassarole dish. Cover with soup mixture bake for 30-45 minutes.

Serve with rice and green beans
