Eat at home

Tonight I had to stop at the grocery store for eggs and bread because I apparently haden't bought enough at the beginning of the week and I saw a special on steaks so I picked up a package and some fresh mozzerella that was also on sale. Since I haden't started dinner yet I used those ingredients for tonights dinner.
The meat eaters had:
Steak served on wilted spinach topped with sauteed mushrooms and onions w/green beans on the side.
DD and I had the same thing except for instead of steak on top of the spinach we had fresh mozzerella. It was really good so I might add it into the rotation more often with whatever type of meat is on sale that week for the ones who eat meat. It was also quick which is always a plus. DD 12 also made a cake for desert since she felt like baking tonight.
Of my original menu we still have the Veggie fried rice, Minestrone Soup and Tuna fettucine w/capers. Tomorrow will probably be fried rice.
 
Last night was interesting to say the least:sad2:

My husband was washing a wall and well then there was a hole. Next my Youngest dd threw up everywhere and then at 3 am a transformer blew out our power for a few hours but a least I made diner last night ha pasta soup and grilled cheese. Tonight chicken Shepard pie

Sounds like a terrible night! Kudos for geting dinner on the table!:thumbsup2
 

Tonight we have to load the truck @ 5:00 for Midnight Run into NYC. So I think we are going to have Pierogis with sour cream and veggies and dip. I so DON'T want to eat out after loading the truck. I know it will seem convenient to just grab something but if something is already planned I'll be ahead of the game ;)
 
I went shopping yesterday, $240 later, I got all kinds of goodies, replenished the essentials (milk, bread, cheese, etc.) but also got some BOGO deals on pork shoulder blade roasts, got a great deal on boneless pork chops, which I was happy for! Also BOGO on salad bags and string cheese. Also got a great deal on oranges!

Leaving tonight to visit sister until tomorrow afternoon, so won't cook tonight or tomorrow (yay) but for Sunday-next weeek, planning on making:

*slow cooker bbq pork, jicima/apple slaw salad (found recipe card from Safeway)
*pork carnitas using leftover pork
*baked chicken adobe, leftover rice, green salad
*chicken & dumplings
*spaghetti, salad, garlic bread
*tacos, rice & beans
Haven't thought beyond next week...have a great weekend ya'll!
 
Tonite is going to be Tilapia- anyone have a good recipe? I was thinking baking with breadcrumbs and garlic.

How about fish tacos? Coat the filets in taco seasoning(I put the filets in a ziploc bag with a half pack of taco seasoning and shake to coat). Then I throw the fish on the gas grill. Serve with all the taco sides. Easy peasy.
 
I am starting cooking for my Zatarains House Party tomorrow. I will post pictures in my blog as I finish:) Glad to hear that the stomach flu is ending in your house figment!
 
So, I usually do my plans monthly and have really been able to stick to it. However, I have found a problem that I had not thought about... the weather! We just bought a new gas grill so I really want to use the heck out of it (grilled foods are so tasty and can be SO healthy). Well, our spring weather can be really wild. Last week we had temps in the high 60s and beautiful weather. This week we have had record rain and even some snow. So, I never know what the weather will hold until about the week of.

Needless to say, I am having trouble with my menus and am having to change a lot of things when the week comes up.

So, tonight is Cashew Chicken (a recipe from Brown Eyed Baker), white rice, and egg rolls. Hopefully Sunday will be nice (they say it will be) and we will be having Hot Dogs on the grill, baked beans, and three bean salad.

Now I am going to go look at the weather forecast and see what my menu for next week looks like.

I thought I was the only one who had days (okay - years!) like that! :laughing: At least your supper plans worked out. :goodvibes

Can I join in? Last night we had crab stuffed tilapia, parmesan & romano rice (bogof) and I had broccoli and my husband had a salad. He also had rolls. Tonight we're having grilled filet mignon (bought a whole tenderloin on sale and had it cut into steaks) and frozen breaded butterfly shrimp (bogof this week at Publix). I'll have a baked sweet potato and my husband a regular baked potato, and we'll both have salad. And he'll have rolls! We eat 99% of our meals at home these days, partially because of finances, and partially because I'm dieting and need to control what goes in to the recipe. And maybe we've taken another step firmly toward old age, because we'd rather eat what we cook for the most part.

We've been having strawberry shortcake a LOT with FL strawberries being in season. I cut up the majority and put sugar on them, but save a portion for me and put splenda on them. I get angelfood cake & sugar free whipped cream :cloud9: , the rest of the family gets pound cake and real whipped cream. I don't feel the least bit deprived!

I am big on that to save money. Unfortunately I am not a very good cook, so it's been a learning process but we try to do that for all ours meals to save money. It's also a lot healthier and find we do a lot better in staying healthy as well(my fiance has had weight problems in the past).

What a great idea to have started this thread. Looking forwards to reading what everyone does for food and meals.

Last night did not go as planned. I took an allergy pill right after lunch since my alleries were really bugging me and I ended up falling asleep until dinner time. So instead of mac and cheese I made us English muffin veggie pizzas and cantelope slices.

Tonight I am making roast beef with mashed potatoes, corn, and fresh sliced fruit.

The rest of the week will be, in no particular order

Roast beef sandwiches with fruit salad
Chicken stir fry with rice
Sausage and cheese strada
vegetable beef soup
corned beef sandwiches with sweet potato fries
grilled cheese and tomato soup
cheesy ham and hashbrown casserole
