Darcy - What is wicked chicken casserole

I am always looking for new chicken ideas!
 
I made a ham on Friday and made my meals for the week this weekend. So my menu for the week incorporates a lot of it:

Monday - Scalloped potatoes and ham
Tuesday - Navy Bean and ham soup
Wednesday - Ham, mashed potatoes and corn
Thursday - Leftovers of the above three
Friday - Frozen pizza
Saturday- Going to Great America so eating out
Sunday - Meat Ravioli and french bread
 
Writing the menu on the whiteboard is the easiest way to keep me 'honest'!

Tonight: White wine scallops w/ harvest grains and tomato (garden is still going strong!), mozzarella and basil salad
Monday: Eggplant ravioli w/ roasted garlic bread
Tuesday: Turkey Kielbasa, Sweet Potato and Cabbage hotpot
Wednesday: Squash Enchiladas
Thursday: Sushi Happy Hour
Friday: Leftover Enchiladas
Saturday: Sukiyaki
Sunday: Leftover Sukiyaki
 
I made a huge crockpot full of vegetable beef soup today and it was yummy. I made some of Pilsbury's new silmply line of buttermilk biscuits to go with it. We have enought left for lunches for the next few days.
 

And decided to try posting our weekly menu to get back on track...

Monday: Crunchy tacos, rice and steamed broccoli
Tuesday: Crock pot baked ham, mashed potatoes, steamed cauliflower
Wednesday: 15 bean soup with ham (& ham bone), home made bread machine bread
Thursday: Chicken Piccata, french green beans
Friday: Pizza & garlic bread ($6.99 with Digiorno's coupon + sale)
Saturday: Balloon Fiesta! sausage breakfast burritos (saving the soft tortillas from the taco kit from Monday and preparing Friday night. Will warm them up in the oven before we go), and coffee from home. Dinner will be Chinese shrimp lo mein, stir fry veggies and cream cheese wontons and possibly pot stickers.
Sunday: Spaghetti, steamed veggie, parmesan bread in the bread machine.

Wicked Chicken

1.5 - 2 lbs boneless skinless chicken, cooked & chunked
1 package stuffing mix
1 package frozen peas, cooked
2 small cans mushrooms
1 can cream of chicken soup
1/2 soup can of milk

Grease a 2 qt casserole and layer enough dry stuffing mix in the bottom to just cover it. Layer in peas, mushrooms and chicken. Mix the soup and milk and pour over the casserole evenly. Make the rest of the stuffing according to the package directions and put on top. Bake at 350 for 30 min.

I find its a great way to use leftover chicken. I've also made it with leftover turkey, used cream of mushroom or cream of celery soup and used different vegetables and its still come out great. I think the original recipe called for green beans, put my family likes it best with peas.
 
Okay, here's my plan for this week. I'm about to put tonight's meal in the crockpot, then I have to hit the grocery store for the rest of the week's supplies.


Monday: Pot Roast, potatoes/carrots in crockpot
Tuesday: leftover pot roast with egg noodles, salad
Wednesday: french toast, sausage, apple slices
Thursday: Arroz con Pollo (someone posted the recipe last week), veggies of some sort
Friday: Steak on the grill, salad, broccoli
Saturday: Chicken Parm?ziti, garlic bread, salad
Sunday: Hot Dogs, baked beans, fries
 
OK, y'all have inspired me!

Today I made homemade salsa that I am going to use to make Salsa chicken tonight and then as a topping for my scrambled eggs this week.

I was recently diagnosed with PCOS so I am trying to make low carb/good carb and no sugar meals.....Y'all have any suggestions? Making meals without rice or pasta has been a challenge for me!

Maybe you could make a chicken pot pie I don't know if you can have pie crust but you could make them with out it.
Veggie stir fry is another
 
Just put everything in the crock pot for french dip sandwiches. Originally we were going to have fries with them but we have leftover spinach from saturday that needs to be used up so we will have that instead.

I am going to try very hard not to eat out until my mom's birthday which is the 14th of October.
 
Chicken Packets:
Canned chicken(drained) mix with cream cheese (3 oz per can),1 TBSP milk, and some chives (dried or fresh)if you have them.
This filling can go into crescent rolls-you'll need 2 cans to make 8 servings-just leave 2 crescent rolls together in a rectangle, pinch the perf. seams, place a spoonful of filling and fold over to make a square packet. Pinch outer seams tightly so no filling seeps out. Bake at 350 for 20 min or until browned.

My kids love these!

I had never heard of Sukiyaki so I read about it on Wikipedia. How do you make yours? Do you use beef, what kind of vegtables do you use? Do you do the raw egg dip thing?

So I have a problem. I feel like I am failing. Some friends of our that we have not seen in two years asked us out to diner next Friday. Which normally is wonderful but I won't make my 30 days of no eating out. Bummer. I know i should not feel this way but we just doing so good. As of today we are on day 14/30 of not eating out. And believe it or not we have never gone more than 14 days with out any type of eating out. So I guess we are doing well and I will just have to start over next Friday.

Anyways we had a wonderful family movie night last night. My oldest picked beauty and the Beast and i don;t think my youngest ever saw it. It so nice just eating pizza a popcorn and sitting together. Its really the simple things in life that make you the happiest.

Tonight is mac and cheese and a another movie night. My dd just picked and said UP so UP it is.

Fourteen days of not eatting out is awesome. That isn't failing at all. There is nothing wrong with going out to eat, it's a nice treat sometimes. For me this thread and concept is more about the panic of not having something planned for dinner and feeling like I HAVE to eat out. If it's something you plan and want to do then you should go and enjoy yourself!:flower3:

Exactly!

There is nothing wrong about eating out every so often. It's when you end up grabbing fast food 3+ nights a week because you don't have anything at home to cook that is bad.

My boyfriend and I go out to lunch once a week. It's our "date" of the week. I have a 4.5 hour break between classes and I would need to get something anyway (I don't like driving all the way home between as it's a waste of time and gas). So we go out to eat and then just hang out together.
 
Here is this week...

Monday 27th - Broccoli Cheese Soup, Biscuits (supposed to be a yucky, rainy, day!)
Tuesday 28th - Leftovers (we always have way too much of this soup)
Wednesday 29th - Chicken Tacos in Crockpot
Thursday 30th - Spaghetti (no meat), Salad
Friday 1st - Spinach & Mushroom Quiche, Salad (never got to make this last week) ... and I need a good pie crust recipe if anyone has one. :)
Saturday 2nd - Sour Cream Pork Chops, Rice, Broccoli
Sunday 3rd - Leftovers if there are any or if there aren't any we will have burgers

Also making Banana Muffins.

I certainly would NOT say that you are failing...it sounds to me like you are doing great! Go out with your friends and enjoy...:thumbsup2

For me, this is not about NEVER eating out...it is about being more aware of the budget for eating out and getting into the habit of planning meals. If I am PLANNING to go out to dinner it is a lot different than those days when I don't plan dinner at all, then at 7:00 everyone is going "Hey, whats for dinner?" and I have no idea so I go out and buy KFC and spend $30 that I didn't plan for...

I have PCOS and try to avoid rice/pasta as well. I try to eat South Beach as much as possible. I try to post my meals each week South beach diet meal planning
 
I also make the chicken packets with the flavored cream cheese, chive and onion, I think. We also do dry ranch powder in them to give them more flavor. They're a favorite around here.

Well thank you all for your input! it helps a lot.

So here is where we are at
Tonight- meatloaf with mashed potatoes and green beans
Tuesday- Hot dogs and pasta salad
Wednesday- Spaghetti and sauce and bread
Thursday- Whole chicken with carrots and rice
Friday- Out to diner with friends
Saturday-Pancakes
Sunday-Pork roast?
Monday-?
Tuesday-Left over sauce and pasta
Wednesday-?
Thursday- Taco dip and chips (not so healthy but its so good and the kids are going to my moms house and they don't like it so might as well make it)
Friday-home made pizza and a movie

We are on day 2 of not eating out and i have lost 4lbs. not to shabby
 
I find that my family is more satisfied with their meal when we eat at home. Its a shame to spend the money to eat out .... and then not feel like you had a great meal. Great choice to budget, have menu's and eat at home.
