Bumping for motivation!
I'm making better choices these days! Having some meal staples around at all times--even if they're nothing fancy or ultra healthy--is such a lifesaver.
The kids had sports until late tonight, we were all famished afterward, and I *almost* caved and got takeout--but instead I remembered we had stuff at home to make club sandwiches with tomato soup, so we went home and had that on the table and ready to eat in 15 minutes. Everyone enjoyed it and we probably saved at least $20.![]()
Blew it again last night. Went out to eat.
Honestly, I know it will get better, but it still bugs me. We are in the process of moving to the USA from overseas, and the ship with all of our furniture on it keeps getting delayed by storms. So we've been living in a hotel for 7 weeks already, with 4 more ahead of us.
I have a microwave and stove top, but no oven. It's just getting old.
Ok, vent over. Meatball subs tonight, that is a start.

Thanks. This thread gives me such inspiration. Tonight was much of the same I woke up this morning with a sore throat and stuffy nose so instead of resorting to ordering out I got some chicken paprikash we had in the frezzer out and warmed it up. it was so nice to have some comfort food. I am going to do a cooking day soon and freeze a bunch of meals for nights just like this.
here is my menu for the rest of the week
Wednesday-Grilled cheese and soup
Thursday-Spaghetti and sauce
Friday- Pizza! and a movie
Saturday-Mac and cheese
Sunday-Pancakes!

I have been all messed up this week, mostly because DD and DH have been sick and I've been attending to home repairs at our cabin out of state. I haven't planned anything for the rest of the week and I'm just not at all motivated today.
Last night I came home rather late with no plans, and not too much food in the house. Hubby wanted me to go out and get some to go from somewhere, but instead I ran to walmart down the road and bought one of their refrigerated pizzas. It wasn't great, but at $7.48 better than take out, sort of.
I think that the rest of the week I am going to keep it super simple: breakfast for dinner, some kind of sandwiches, fish sticks/fries.
I'm just not in the mood to cook.![]()
This was my menu this week:
Saturday - Broccoli & cheese soup, biscuits
Sun - Jambalaya, salad
Mon - Grilled chicken, homemade mac & cheese, green beans
Tues - Shepherd's Pie & salad
Wed - Pancakes, Breakfast Sausage, fruit salad
Thurs - Tuna noodle casserole, peas
Fri - Pizza soup, garlic bread sticks
It was the first time in as long as I can remember that I planned out the entire week based on what I had in the cupboards/freezer with a shopping list of minimal items.
Just imagine what you like to eat on a pizza and adjust the ingredients accordingly...you might think of even more ingredients that would be tasty.
1 onion, chopped - cook this with a tbsp of butter first so it's not so strong onion-y
1 green pepper, chopped
1/2 cup sliced mushrooms
1/4 cup of sliced green olives
1/2 can of sliced black olives
1 stick of pepperoni cut into small chunks
2 (14.5 oz) cans pureed stewed tomatoes
1 small can beef stock
1 tsp basil (I like fresh, but I'm sure dry would be good)
I throw it all in the crockpot on low for 6 hours.
Canned or frozen breadsticks - add some garlic butter.
Top the soup with shredded mozzarella cheese.
I am totally guessing at the amounts, I'm not a recipe-follower, I tend to toss everything in my crockpot.
