OK so you all inspired me to write down my plan this week. Here is everything I plan to make!

Monday - Sloppy Joes, Corn, Grapes
Tuesday - Hawaiian Chicken, Green Beans, Rice
Wednesday - Leftovers
Thursday - Spinach, Bacon & Mushroom Quiche
Friday - Veggie Lasagna, Salad
Saturday - Leftovers
Sunday - Pork Chops, Mashed Potatoes, Broccoli
 
I was just telling DH today that I hope we can really cut back on our eating out until our trip to Disney in October. It would be nice to save that money for then. We are bad about eating out on the weekends, week days are usually OK except if we meet DH for lunch at work sometimes.

Lately I have been really slacking on planning and even cooking because it has been SOOO hot here in FL. I just don't feel like cooking much! I've also been couponing a lot to save money, which is nice, but then I end up not planning as well and just getting the deals so we are missing 1/2 ingredients to actually make the meals I want to make. LOL I need to get back into the swing of things, hopefully this thread will help!!

I'm stealing some of your recipes! LoL Thanks so much for the link to your blog. I will have to try some of the stuff you have posted!
 
I just wanted to say that I made that pesto pizza last night. I used Rhodes frozen rolls for the crust and I added black olives, because we like them. It was a HUGE hit!!! Today I have the hashbrown casserole in the crock pot and made another one of those pizzas for lunch with the leftovers. Thank you! Thank you! Thank you! :worship:

I love the idea of using the frozen rolls for the crust. I've used frozen bread dough before, but with rolls you could easily do individual pizzas. Thanks for the idea!

You have a nice blog! I had to look at the recipe for chicken thigh pie. I know you said you didn't like it much. I think the combo of orange juice/bbq sauce sounds different, but I like the idea of combining sweet potatoes, chicken and cornbread. I may try something with that combo one of these days.
 
Maybe I should start a new thread for all the recipes I am sure we are going to want to share. I know that as I have read through your menus, lots of dishes sound great. :thumbsup

The green beans are super easy. In fact, the recipe comes from my daughter's pre-school as they do a program where they grow vegetables, make a recipe in class during the day and then send the recipe and ingredients home for us to make as a family. It is a lot of fun.

Sesame Green Beans
1.5lbs fresh green beans
1 TBSP olive oil
1/4 cup (I use less) sesame seeds

Wash and trim green beans. Heat oil in skillet over medium heat. Add green beans and saute until tender. At the same time, heat sesame seeds in an ungreased frying pan on medium heat, shaking or stirring the pan frequently. Remove from heat when seeds start to darken (typically by this point the beans are done too). Mix the sesame seeds with the green beans and serve. If you want a bit more flavor, you can add low-sodium tamari or soy sauce and a few drops of sesame oil to the beans when they are cooked.

Well, I successfully completed my first week of not eating out at all. I skipped two times when we normally always would eat out as well as at least one occasion when I would have suggested that we eat out. We might have cheated a bit on date night - we got take out, but from the grocery store. We bought a few pieces of fresh fruit, a loaf of sliced Italian bread, some pre-sliced block cheese and some trail mix and then we had a picnic in the park. It was actually a lot of fun and we spent half of what we normally spent eating out. :goodvibes

I did my shopping today and so I have three menus for this week - one for dinners, one for DD's lunch (she is in day camp) and one for my lunch. Here is my dinner one:

Tonight - We had Cuban braised beef with rice and mango (a Real Simple recipe) along with a green salad
Monday: Creamy ravioli and pesto (also a Real Simple recipe), probably with some frozen corn
Tuesday: DH has to go to a wake so we are having something quick- hot dogs and corn on the cob that will get cooked on the grill. I will probably also serve assorted cut up raw veggies
Wed: Spaghetti tossed with fresh tomato & garlic, garlic toast and green salad
Thurs: Garlic lime chicken fajitas (a McCormick recipe) with garlic roasted butternut squash (can you tell we like garlic here?)
Friday: Chicken skewers with peach and peppers (a Weelicious recipe) with rice and peas
Saturday: Chicken fried rice made with leftover rice, chicken and veggies from the week.

I'm going to read through this thread again to get inspired for next week! :thumbsup2

Thursday: Roasted chicken/mashed potatoes & asparagus
Friday: BBQ kick off party for hubby's football team
Saturday: Slow cooker Texas style beef brisket
Sunday: Fried chicken
 
Love this thread. The menus are very impressive, but eating at home doesn't need to be complex. Scrambled eggs, pasta w/ olive oil and garlic, grilled meat and a simple salad...fresh fruit w/ all of the above....still easier, quicker, and cheaper than eating out. I always shop w/ the thought that I'll be a wreck at least 3 nights out of the week, so will need easy dinners.
 
My DS 13 loves the below recipe. I left it intact for anyone following WW. What I do is cook a whole box of macaroni - this will fill a 13 x 9 x 2 inche pan- and multiply the ingredients by 1.5. So instead of 1 cup of milk use 1 1/2 cups of milk, etc. I will sprinkle dry bread crumbs on the top before I bake it. I play with the different cheeses - our favorite is the packaged 4 cheese mexican blend. Enjoy.

Macaroni and Cheese

Ingredients:

2 cups elbow macaroni
1 cup low-fat (1%) milk
2 tbsp all-purpose flour
1 tsp dijon mustard
1/2 tsp salt
1/4 tsp freshly ground pepper
1 cup shredded extra-sharp cheddar cheese
3 tbsp grated parmesan cheese


Instructions:


Preheat the oven to 350°F (175ºC). Cook the macaroni according to package directions. Drain and keep warm.
In a large nonstick saucepan, combine the milk, flour, mustard, salt and pepper. Cook, whisking constantly, until the sauce thickens and comes to a boil, 3-4 minutes.

Add the cheddar in batches, stirring after each addition

How long do you bake it?
 
Sorry about that - I went back and fixed the original recipe.

But you bake it for about 20 minutes.

Well, last week was a success and we stuck to the menu completely:goodvibes
So here I am planning this weeks menu.

Tonight, Lean Ground Beef over mashed carrot/potato/turnip with gravy and green beans (I realize it sounds yucky but son loves it)

Tuesday/ Breakfast for dinner

Wedneday/ Wraps (ground beef, cheese, lettuce, veggies, sour cream)

Thursday/ BBQ Chicken, Baked potato/ Carrots

Friday/ Veggie Chili, Garlic Bread, Salad

Saturday/ Hamburgers and Hotdogs, Fries, Salad.

Our week is looking pretty yummy. Its the first week back to school so we will be working to get everyone back into a routine.. soccer hasnt started yet so we get a few more fussy dinners.

Monday- Porkchops, shells and cheese, green beans
Tuesday- Spaghetti with meatballs, green salad, garlic bread
Wednesday- hot dogs and chili, chips
Thursday- Ohana Chicken wings, take-out noodles, veggies
friday- steak, garlic mashed potatoes, corn
saturday- Dh and kids go to the racetrack with my dad.. so whatever lefteovers I decide
Sunday- Pancakes and sausage.
 
Here's mine for the week:

Monday ~ Chicken Fettucini, salad
Tuesday ~ Tacos, Mexican rice, salad if there is any leftover
Wednesday ~ DH out of town, NO COOKING!
Thursday ~ DH still out of town, NO COOKING!
Friday ~ Grilled pizza, Greek salad

I typically plan menus for Friday ~ Thursday and shop on Fridays. I *rarely* plan a specific meal for a specific day ~ this week I did because DH is out of town so I am using up a few things and didn't really need to plan much.

Fridays are ALWAYS burger or pizza (homemade) nights but that is the only night I plan the same thing for.

Last week I did not do so hot with my plan. I realized that my problem is that besides needing my meals planned out, I need to do some advanced prep, or this will never come together form me. Last week I did stupid things, like forgot to take meat out of the freezer, etc. I spent yesterday prepping some of my meals (made my spagetti sauce, threw together my taco meat, boiled some potatoes that I will fry later in the week, and made the filling for my chicken pot pie) so I am hopeful this week will go better. Meals this week are:

1. Bratwurst on the grill, potato salad, leftover baked beans
2. Taco salad
3. Chicken pot pie, applesauce
4. Spaghetti, salad
5. Split pea soup, garlic bread
6. Sausage, peppers, onions, and cubed potatoes (I stir fry all together untl brown)
 
@Tiffany - I have been trying to get onto your blog all morning and it isn't loading... are you having problems with it today? I have been able to get onto other blogs, so I don't know why I can't load yours.
 
Well today we are eating out. Its my baby girls 4th birthday! I can't believe it! We are starting out for some shopping at American girl store and then are off to the Burlington mall for lunch at the Rainforest Cafe!

Good point, and good to know I'm not the only one who is a wreck at least 3 nights a week!
