Eat at Home 3!

Yesterday we had Fettuccini w Bolognese Sauce (NY Times recipe) (Delish recipe) and leftover cutlets I hid in the veggie drawer from Thurs
Today is Chicken Pot Pie ( Ree Drummonds recipe has been voted in a family favorite)
MIL's Goulash recipe or her stew (meat looked good at Costco today, enough for 2 meals)
Pork Loin (McCormicks Recipe Inspirations - Rosemary Glazed Tenderloin with Carrots)*
Tacos (I love Ree Drummonds Simple Perfect Chili recipe for my tacos) bumped from last week
Pizza Night, of course
Chicken Stew (McCormicks Recipe Inspirations - Tuscan Chicken Stew)*

* I miss McCormicks little recipe inspirations kits so much! They had the best recipes and LL the unique spices measured out perfectly so I'd try new stuff without needing to commit $$$ to a big honkin container of a random spice that'll just go bad:( I wish another company would put out something similar... sigh

Which one? I’m partial to Marcella Hazan’s version but they are all good👍🏾

This week I’m playing with new recipes for a Lunar New Year celebration later this month. I’m also required to lower the freezer level.

So yesterday took a Cornish hen and the rest of a cod loin out to defrost.
Cutting the hen in half to cook two different Asian styles: soy braised and a variation on Peking duck.

The cod will be roasted with a mustard sauce on the side or possibly covered in Ritz crackers and baked.

Other meals for this week will be various frozen soups and stews. It’s time to stop dilly dallying and eat the stores.

I went back to check and it looks like we made the recipe from Delish last time and split it into 2 meals, yesterdays was frozen and defrosted.

I think I want to try a new one though because this didn't have that nice heavy meaty quality I like in a Bolognese which is why the Time was what I was thinking. I'll give the one you recommend a try next time, the NY Times has some fantastic recipes.
 
DH and I were both sick last week so the menu kind of went out the window depending on who had energy to cook and what sounded good at any given time, but we didn't order/eat out so count that as a win. This week:

Sunday: Homemade cheeseburgers and air fryer fries
Monday: (long day at work - everyone has been round robin-ing being out sick) so leftover ravioli with sausage and sauce for DH and Stouffer's mac and cheese for me
Tuesday: turkery bbq meatballs over egg noodles
Wednesday: lazy "cordon bleu" roll ups with rice

Later in the week TBD.
 

Going to go do an intercity of out freezer and pantry to see what we can pull together. May do a local taco place tomorrow. In Tuesday’s they offer a taco platter for $7. It’s 3 huge tacos, rice and beans and 2 extra tortillas. So we can get 2 of those for $14 and have dinner for two tomorrow as well as lunch for 2 on Wednesday.
