Eat at Home 3!

With my dad's increasing health issues, the new normal for the foreseeable future is for DH and I to go to my parents' house on Tuesday directly after work to cook dinner, then stay over (I'm off on Wednesdays and plan to help in the home and with errands, drs appts, etc.) and then make dinner again Wednesday night. We will leave from my parents' house to head straight to work on Thursday mornings. DH and I share a car and work at the same place which is why this is is the gameplan. All this to say, planning is going get interesting since now I have to take into account my parents' tastes/preferences two nights a week and really be prepared on Thursdays to avoid take out/eating out. I have to get very organized because I have to plan work day breakfast and lunches to be packed accordingly for the days we will be at home and away from home. It's going to be an adventure.

They need the help and thankfully DH is all in, very flexible, and willing to help me plan shopping and meals so I've got a lot of support. Trying to keep a positive attitude because it is a lot. We will see how it goes and reevaluate over the holidays.

ETA: This is only possible because DH and I are childfree which takes a portion of the stress and scheduling headaches off the table.

Elder care is complicated! This sounds like a great way to offer some support, but it will definitely add some planning challenges for y'all! Good luck to everyone involved.

There is no “hug” reaction, so I used the like button. I don’t “like” that you’re in this situation, but I admire your positive attitude and hope it all works out the best way possible!
 

Chugging along. Activities start next week and with them our busy time starts. I made a list of easy meals. Let’s see how long I can keep up the planning and prepping before I fall into a slump again.

Today: pan fried chicken breast with couscous and spinach
Tomorrow: just me!! Not sure yet. Whatever seems appealing at the store tomorrow. Probably mushrooms since the rest of my family hates those.
Sunday: brisket, mashed potatoes, green beans
Monday: pumpkin soup and homemade bread
Tuesday: pasta puttanesca
Wednesday: burgers and fries
Thursday: sheet pan chicken fajitas
Friday: leftovers/grilled cheese
 
Tonight was teriyaki tacos
Saturday - Burgers on the grill and french fries
Sunday - TBD (will plan Sunday and Thursday this weekend)
Monday- Marinated london broil and roasted potatoes
Tuesday (@ parents) - fried chicken cutlets with pasta and sauce
Wednesday (@ parents) - my 45th birthday so I think we are going out with my mom since my dad comes home on Friday and he is not capable of going out to eat anymore
 
Tonight: Matzoh ball soup, Italian bread
Tomorrow: Rotisserie chicken w/ gravy, roasted veggies, stuffing
Tuesday: bbq ribs, mac and cheese, salad
Wed: sweet and sour chicken, rice, Asian veggies (carried from last week)
Thur: Tortellini, salad, garlic bread
 
Last week went off the rails with planned meals. Lots of carry over so the food doesn't go to waster.

Sun: Hamburgers, hot dogs, tater tots
Mon: Cottage pie
Tues: Pork chops, mashed sweet potatoes, broccoli
Wed: Pasta, homemade sourdough
Thurs: Chicken, mashed potatoes, green beans
Fri: Rice bowls
Sat: Lettuce wraps

Hope everyone's week is off to a great start!
 
Talking with my home aide and she pointed out that she’d never heard or tasted corn broth before. Probably a use it up before throwing it away lesson I learned from my grandmother and who knows who she learned it from.

For every cob you’ve removed the kernels from, use 2 cups of cold water. Thus if you’ve 6 cobs add 12 cups of water to a tall pot, bring to a boil then immediately switch to a medium slow simmer (180 degrees) and leave with pot cover on for 2 hours. You’ll be left with a delicious broth for corn chowder, veggie soup, etc at no extra food cost.

I don’t salt the water but this is a personal stance.
 
Posting a little late - getting into the first full week of school here in NY has me playing catchup!

Sunday: Sunday Sauce with meatballs and homemade bread(meatball subs for the college kid)
Monday: Ribeye, twice baked potatoes and oven roasted broccoli
Tuesday: Cajun Chicken Pasta with garlic bread
Wednesday: Cheeseburgers and potato wedges
Thursday: BBQ chicken, mashed potatoes, cornbread
Friday: Pizza out

(and I try to add a vegetable side to each meal but we kind of play those by ear based on what is fresh and local each week...this week we have zucchini, broccoli and fresh carrots along with mushrooms and corn)
 
Thursday- Grilled cheese for me, homemade breakfast sandwich on a bagel for DH
Friday- Teriyaki tacos with rice
Saturday- Burgers and fries
Sunday- Grilled chicken breast with sweet baby rays bbq sauce (DH and I like different kinds) and the leftover rice from Friday
Monday/Tuesday- (back at my parents' for 2 nights so need to consult with them about what they want and see how it's going with my dad back home from rehab. He had a tough day today and was very confused so they are running a few tests)
 
Monday (@parents though dad might not be home from rehab facility yet): grilled honey lime chicken with rice
Tuesday (still @ parents): Tacos
Wednesday: London Broil with some kind of potato
Can't think any further ahead than that. It's all I've got. This going back and forth to my parents has me just trying to keep my head above water between planning dinners they want, planning our breakfasts and lunches, making sure the cats are taken care of....not to mention what ingredients are where for dinner while trying to keep a budget. Just going to keep on swimming.
 
The last few weeks have been different. DH went to Florida for a week. DD tend to graze on food rather than plan big meals. Also I have not felt well in over a month so I have little desire to eat or to plan meals. The last couple of days I ran to the store after work to grab dinner. The first day I bought 3 steaks but DD and I didn’t want any so 2 went straight to the freezer.
 
We are drowning in vegetables from our farm share and trying to free anything we can for the winter (lots of squash soup, green beans, and about 1000 pounds of shredded zucchini :) )
Sunday - egg sandwich, kale salad, roasted potatoes and green beans
Monday - spaghetti w/ marinara sauce & chard, kale salad
Tuesday - Chili and guacamole
Wednesday - Soup Night
Thursday - no clue
 
Sunday- BBQ turkey meatballs over egg noodles
Monday- Teriyaki chicken tacos with rice
Tuesday- Back to my parents- dad requested take out pizza so that works
Wednesday-@my parents- Spiral ham with sweet potato casserole
Thursday- Back home - Marinated london broil and roasted potatoes
 
Sunday - Buffalo Chicken Meatball Subs on homemade rolls, macaroni salad and fries.
Monday - Chicken Alfredo Lasagna Rollups, salad and garlic bread
Tuesday - Pot roast, mashed potatoes and oven roasted vegetables
Wednesday - Sausage sandwiches, mac & cheese
Thursday - Steak bites, twice baked potatoes, sauteed mushrooms and onions
Friday - Homemade Pizza
 
Our chest freezer is getting close to empty - is very exciting. I'm hoping to defrost and clean it sometime in the next couple of weeks!

M- Tomato basil pasta salad with sauteed chicken
Tu- Buffalo Chicken Salad
W- Omlettes
Th- BLT sandwiches
F- Takeout
Sa - Homemade Pizza
Su- Pork, apples and cabbage, rice

Yes, getting to the end of the freezer is like embarking on a new adventure. By mid summer my chest freezer emptied and now it’s the end of September and it’s filled to the gills again. Hope I can find the space for a holiday roast as that would be a nice savings getting it early.
 
Sunday - Crock pot pork chops (recipe only made 4, so no leftovers), rice;
Monday - sausage wraps, leftover rice;

Tuesday - Thursday, not sure as I have to go to Walmart today;
(We were going to do tacos tonight, but the HB meat I bought last week is out of date, so had to throw it away)

Friday - football game, so something quick & cheap or concession stand;
Saturday - date night;

We lead such exciting lives :rotfl: My teenage self would be so disappointed by how excited I am about my almost empty freezer and and my enthusiasm for meal planning.
