Eat at Home 3!

I had planned to post my meal plan last night, but life stepped in & kept me away from the Internet.

Here is my plan now...it is actually a longer term plan than usual, as I decided to plan out for the rest of our days until we leave for Disneyland on April 29th! I am trying to save a little extra $$ for our trip, so I made a small grocery trip Sunday morning to buy $25 worth of produce and, except for a quick trip to pick up an herb I need to buy closer to when I make one dish, that is my last grocery trip until we are out in California. We'll be eating mostly dishes we can make either with food from our pantry or freezer, or produce items we have which have a little bit longer shelf life.

Breakfasts will be a mix of muffins/coffee cakes, tofu scrambles (Ranch style, red bell pepper, cabbage & cumin, etc.), vegan fruit pancakes, boxed cereal, smoothies, etc. lunch will be mostly leftovers from dinner, some PB & J sandwiches, and this dill & chive bean spread on homemade bread: http://sweetsimplevegan.com/2016/01/dill-chive-bean-dip-or-spread/ )

Monday 4/11: taco salad with a blood orange & blackberry banana ice cream dessert

Tuesday 4/12: Zapiekanka again, I'm trying to perfect my adaptation of this recipe: http://www.sensualappealblog.com/traditional-zapiekanka/ & my 4 bean salad (super easy to make, it's my own recipe & great for summertime--will share recipe here if anyone wants it)

Wednesday 4/13: Savory Chickpea Pancakes (chickpea flour, tomatoes or red bell peppers, frozen peas, onions & some spices and all) & Saag Baag (Indian tofu & spinach dish, super delicious)

Friday 4/15: Apple Potato Rösti with blackberry banana ice cream for dessert

Thursday 4/21: homemade creamy stovetop Mac & cheese (see post a few days back for recipe)

Friday 4/22: homemade bierock turnovers & homemade Mac & cheese turnovers (or hot pockets, whatever you want to call them. Making a huge batch & freezing half of the bierock ones & a couple of the Mac & cheese ones to test out for future make ahead meals)

Saturday 4/23: homemade pizzas; bierock pizza & Carmelized onion & apple pizza with cashew ricotta sauce

Sunday 4/24: vegan Poutine & some veg side dish to be determined

Monday 4/25: breakfast for dinner; pancakes & fruit & tofu scramble, possibly muffin or coffee cake as well

Tuesday 4/26 & Wednesday 4/27: homemade kidney bean burgers (from the best bean burger recipe I've ever found--it's from a cookbook, I'd be happy to type it up if anyone wants it as I know it is hard to find a bean burger recipe that sticks together AND is tasty!) with homemade smoky thousand island dressing on homemade buns & a pasta and bean salad

Thursday 4/28: I'm going to the freezer for this one, thawing out the last of my vegan Welsh rarebit sauce & making that to use up whatever bread or rolls we have left over.

Friday 4/29 onwards: we'll be road tripping in Anaheim (DISNEYLAND!!!!), Venice/LA, Big Sur, Sacramento, Portland, Seattle, Spokeane, Fargo, Minneapolis & Chicago. We'll be home 5/17 or thereabouts (plus or minus a day). I'll have access the a kitchen in Sacramento for half a week & will be cooking there, otherwise we'll be eating sandwiches, easy to make in hotel rooms/camp sites raw vegan dishes or eating out.

Certainly! Here's the 4 Bean Salad. It's pretty flexible, as I like to be able to make it year round, even when there aren't any good fresh green beans available. I will point out, this recipe makes probably more dressing than is needed just for the beans, in part because I really hate when a pasta or bean salad has so little dressing that it all gets absorbed on the first day & leftovers are too dry & not flavorful enough. Also, I occasionally throw in a couple cups of shape pasta (elbow, rotini, bow tie, etc.) & this recipe contains enough dressing to accommodate a little added pasta, too.


4 Bean Salad

1 (15oz) can of garbanzo beans
1 (15oz) can of white, navy or cannellini beans
1 (15oz) can of kidney beans
1 1/2 to 2 cups fresh green beans, cut to approx 1 inch pieces with ends snapped off
OR
1 (15oz) can of green beans
4 green onions, chopped
1 to 2 celery stalks, sliced into small half moon shaped pieces
1 tablespoon honey or agave nectar
1/2 cup apple cider vinegar
1/4 cup canola oil (or other vegetable oil)
1/2 teaspoon ground dried mustard
1/4 teaspoon ground black pepper
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
Dash or two of cayenne pepper (optional)

Drain & rinse all canned beans & add all beans, onions, celery & green beans in a large mixing bowl & mix to combine.

In a separate bowl, add the rest of the ingredients & whisk together to form a dressing. Pour dressing on bean salad mixture, toss gently to coat. Cover & refrigerate at least 2 hours to allow flavors to meld. Gently toss before serving.

Kidney Bean Burger & Smoky Thousand Island Dressing

Smoky Thousand Island Dressing:
1/2 cup vegan or regular mayonnaise
2 tablespoons sweet pickle relish
2 tablespoons ketchup
2 teaspoon horseradish sauce
1 teaspoon liquid smoke

Burgers (makes 4 patties):

1 cup onion, coarsely chopped
1 (15oz) can no-salt-added kidney beans, rinsed & drained
1/2 heaping cup rolled oats
2 tablespoons flax meal
1 teaspoon garlic powder
1/4 teaspoon ground black pepper
1/4 teaspoon ground dried mustard
1/4 teaspoon ground ginger
1/4 teaspoon ground allspice
1/4 teaspoon ground coriander
Pinch of crushed red pepper flakes
Pinch of ground cinnamon
Pinch of ground cloves
1 tablespoon reduced sodium soy sauce OR coconut aminos

To make the dressing:

Put all ingredients in a small bowl & whisk to combine. Makes approx 3/4 cup of dressing.

To make the burgers:

Place all ingredients in a food processor in the order listed above. Pulse 10-15 times, stopping to scrape down the work bowl 2-3 times with a silicone spatula. Texture should be well chopped, but NOT puréed. Form into 4 equal patties.

If not cooking & eating immediately, place in a Tupperware or similar lidded container in a stack with a small piece of parchment or waxed paper between each patty to keep them from sticking together. Can be stored in fridge this way up to 4 days.

To cook burgers, mist a large, heavy skillet with cooking spray & heat over medium heat. When the pan is hot, add patties & cook approximately 5 minutes each side, until golden. Place each on a bun & top with dressing (optional: top with dressing & 1/8 to 1/4 cup sauerkraut). Patties are delicious without dressing or with mustard or ketchup as topping, but are particularly suited for this dressing. If you are missing one of the spices, feel free to omit, but try to omit no more than 1 as the burgers end up too bland and/or without the depth/complexity of flavor without the appropriate spices.

@GlitteryOtters Both of those recipes sound great! I think I may give the veggie burgers a try for lunches for myself :) I don't think I could get my guys on board, lol!
They are REALLY good for lunch! When my dinner meal plan doesn't contain meals with good leftovers for lunch, this is my go to meal option. I love that I can make them up in advance & just quickly cook them up when I'm hungry.

I bought a whole cut up chicken on sale. The breasts will be dinner Monday. Today I am making leftover seasoned chicken soup for the weekend, boil the chicken with all the fridge leftovers- droopy veggies etc. cook as long as possible, strain it all then add carrots and celery to fresh broth. Strip chicken from bones & add to soup bowls, put extra aside and make chicken enchilada tomorrow with chicken salad for lunch.

I made steaks Monday and am saving the leftovers & bones for broth for barley soup when the chicken soup is gone. If I can get a decent amount of meat from the leftovers off the bones we will have warmed garlic bread & steak sandwiches with cheese for lunch Sunday.
 
I've been lurking this post for a while, and I've gotten plenty of inspiration from this and the 2 previous threads. I'll post what I have done for the past 2 weeks to contribute : )

-Last week in no particular order, we had:
Chili and cornbread
Patty melts and mandarins
Lentils with chicken and homemade na'an bread
BBBq chicken, cilantro rice and pineapple
Japanese hamburger steaks and white rice

-This weeks menu:
Turkey burgers with chips
Beef stir fry and fries
Today we had chicken teriyaki with white rice, and carrots and asparagus
then probably some soup with bread and a salad
beef stew

All of these (except for tonights) yield plenty of leftovers, but then again, is just me and my bf... Since I saw someone asking about what people do with lunch, I take the leftovers for work, my bf works at home, so he usually makes a sandwich (which is what sometimes I do if there's nothing left) or has some instant noodles from the Thai market across the street from us. Or has breakfast since he usually wakes up late anyway lol
 
This weekend will be differentt since I will be out of town for a church conference.

Tonight - Dinner Out
Saturday - BBQ Ribs w/ potato salad
Sunday - Meatloaf at my parents house
Monday - Steak with Asparagus and a salad
Tuesday - Community Block Party (Hamburgers/hot dogs)
Wednesday - Breakfast for Dinner (or SOS as my DH calls it)
Thursday - Marinated Chicken Tenders and Salad
Friday - Pasta Bake
Saturday - Hamburgers
Sunday - Kieobasas or kabobs

Monday - Grocery Shopping

Here is my next meal plan. Made it as easy as I could so that I would have a bit extra in my grocery budget this week. Meijer is having a 10 for $10 sale and there's some stuff I would LOVE to pick up. We'll see what happens though!

Tonight: No idea... I am NOT hungry so may just have a bagel with butter
Saturday: @ my Aunt and Uncle's house for birthdays! Free food!
Sunday: Eggs, fried potatoes with peppers and zucchini

Monday: Leftovers
Tuesday: (Grocery Day) Beef Stroganoff

Tuesday: Cuban style beef and rice
Wednesday: orange glazed pork chops with citrus salad and bread sticks
Thursday: beef enchiladas
Friday: crispy chicken with pan fried potatoes

Sat - Honey BBQ Boneless Wings, Egg Fried Rice, Baby Carrots with Ranch (we have a cupcake party to attend, so a very light dinner)

Will make a sweet potato custard for a dessert/breakfast for the week...

I'm making the above bean burgers, black bean and corn quesadillas with guacamole , smoked sausage cooked with potatoes and green bean served with cornbread and crock pot chicken casserole. I've got a big salad and big bowl of cut up fruit for easy sides.

I'm baking banana oat muffins and blondies for treats.

We are on the verge of grilling season here!

Still had about a takeout soup container (like 1 1/2 cups) worth of last week's baby watermelon and family had eaten through our desserts, so I took a vanilla cake mix, a large strawberry Jello gelatin mix, the watermelon, 2 eggs, and about 1 1/2TB of veggie oil (eyeballed it) and am making a watermelon strawberry bundt cake. I used an online recipe as inspiration, but made my own changes. I'm baking it at 350 now, but I know it's already a winner b/c certain family members had to try the almost red batter and see for themselves what it tastes like. I now need to buy a few more vanilla cake mixes b/c they are another amazing way to get rid of lovely fresh fruit a touch past its prime in a "dessert" form, so it's sneaking fresh fruit in the diet (and the fruit lets me reduce the oil in the mix prep for a win-win:)...and my family hates frosting, so they enjoy having a very flavorful cake:)...
 
Last Weeks Plan-

Monday- fajitas (have lots of peppers) (we had pasta and salad)
Tuesday- DD will eat at outlaws as DH and I are both working days - not sure what we will have- leftovers? (we had chicken pot pie from inlaws)
Wednesday- turkey surprise (turkey dinner leftovers frozen together in a casserole) (had the fajitas)
Thursday- fish of some sort, rice, some sort of veg (had the turkey surprise)
Friday- bday dinner at a friends (had yummy pulled pork and other goodies at party)
Saturday- I'm thinking appies and dips- DD visiting bio-mom (lazy dinner with DH- he had PB and banana on a bun and I had leftover chicken pot pie)
Sunday: We had appies from the freezer and salad

This Weeks Plan:
Monday- We are both working days- think I have chili in the freezer (We had fish and chips from the freezer)
Tuesday- stuffed pasta tubes, salad, garlic toast (homemade burgers)
Wednesday- salmon and rice and veg (we had a Costco chicken with pasta and tomato sauce)
Thursday- ground pork burgers (Mediterranean seasoning- yum!) and fries and salad (New York steaks with salad and garlic bread)
Friday- thinking hotdog/sausage roast at the outlaws farm (we made homemade pizza)
Saturday- ?? Not sure yet (I used the leftover steak and made stirfry with lots of veggies and some chow mein noodles)
Sunday- rotisserie whole chicken on the bbq, some sort of side and veg

Sunday-cereal for dinner. DH loves cereal for dinner on Sundays. I'm not sure why but he thinks it's the best. Oh well, no cooking for me!! WOOHOO!
