Eat at Home 3!

My husband travels quite a bit for work so this week I'm mostly on my own with the kids.

Sunday 10/18 - Chicken Tikka Masala, basmati rice, green beans
Monday 10/19- Chicken gnocchi soup, cheese bread, fruit
Tuesday 10/20 - Crockpot African chicken, rice
Wednesday 10/21 - Cheeseburgers, french fries, fruit
Thursday 10/22 - Rotini & meatballs (w/sauce), crudités
Friday 10/23 - Pizza, fruit salad
Saturday 10/24 - take out night

Friday we are going to a fall festival and plan to get a lot of apples. I will be canning applesauce this weekend and probably making apple bread and/or apple butter.
 
Do you make your own hamburger helper? If not, I have a great recipe one if you were interested!

Yes and no. LOL In this instance, we have a box of hamburger helper to use up...but I have two amazing homemade copycat recipes that we generally make (a lasagna one and a stroganoff one). I'd still be interested to see if you have a recipe that I don't tho...if you want to share. I had a cheeseburger mac one but no one here liked it and I keep forgetting to search for another one.
 
Tonight-chili, grilled cheese, hummus and cuke, carrot sticks, apple slices
Tues-burgers, salad, loaded baked potato soup
Wed-chicken fingers and homemade fries (if I have the energy) otherwise, crispy chicken wraps, salad
Thurs-pasta alfredo with chicken and broccoli
Fri-pizza with salad or veggies and dip
Sat-hamburger helper with peas unless my sister's family stays for dinner...then it will be shepherd's pie
Sun-full on turkey dinner

I'm am deeply ashamed to admit it, but I made burger patties from scratch for the first time ever!

Alright, in my defense...my lazy streak goes right to the bone...and I DID think they were harder to shape than they actually were. I made six patties for about $3 as opposed to the portion control ones I used to buy in a box to the tune of $9 for 8. :sad2:

DD loves burgers and they haven't been on sale lately, so they haven't been on the menu. But, I figured that since I just stocked up on ground beef following a decent sale...and I just got a pack of buns for free ("if the wrong price comes up at the register, then the item is free policy" woot!!) I'd give the whole homemade thing a shot. I mean, how badly could I screw them up?

The upside? DH saw them reposing in the fridge and his eyes lit up. Like serious delight at the prospect of homemade hamburgers for dinner tonight. Uhhh...wha?????? Who knew he'd be so into burgers in October?

Anyway, if they taste good, I know I'll be making them again. :flower1:
 

Usually we have leftovers on Tuesday since that's my shopping day, buy my parents have been staying with us for the past 2 months so we've had no leftovers!

Tuesday - Hawaiian Sweet Roll lunchmeat sandwiches
Wednesday - Mexican Penne
Thursday - Chicken Pillows
Friday - Steak
Saturday - Chili
Sunday - Pizza (Homemade)
Monday - Maple Dijon Chicken
 
Wishesuponastar- my lemon pepper chicken is shamefully easy. I use chicken (not skinless/boneless) and sprinkle McCormick lemon pepper seasoning on the chicken. Bake 30-45 minutes. That is it! Nothing fancy.... Lol :)

I made burgers tonight too! And roasted veggies, and cantaloupe.
Last night we had pasta with chicken and zucchini meatballs. And broccoli tots.
Tomorrow will be chicken burrito bowls.

Regarding the burgers...DH had two (and DD12 who has recently developed a hollow leg) ate THREE!! Now, I did make six out of one pound of ground beef, so they were on the small side, but STILL...I hadn't any intention of having a second one but thought that DD could bring it in her lunch the following day. Nope. Three burgers at dinner. Geez. I guess I can confirm that I will indeed me making them again in the future.

I'm making next week's menu. I have lentil sloppy joes down for Monday and Tuesday will be pasta with veggie meatballs and garlic bread. I also plan to make a soup in the crockpot that someone gave me in the 10 or less crockpot thread.

I am also in the mood to bake! Has anyone made the pumpkin muffins from pinterest that are just pumpkin and cake mix? Are they good?

Let's see - this week has been...
Mon - Beef Tacos, Clementines
Tues - Chicken Pot Pie soup with extra kale (and leftover restaurant baba gahnoush) thrown in - this was the best pot pie soup I've made...and likely the only time I'll make it since the odds I'll have leftover eggplant dip are not high:) and biscuits
Wed - Deluxe Cheeseburgers, Eggplant "pizzas" (eggplant slices brushed with olive oil, sprinkled with salt/pepper, and topped with tomato slices, basil, and a little parm/mozza cheese mix and baked)
Thurs - Chicken Mac and Cheese with Roasted Broccoli on top, Dark chocolate fresh raspberry muffins (raspberries were forgotten in the fridge and not quite firm enough to eat raw, but will be great in the muffins)
Fri - Chicken Fajitas, Fresh fruit salad
Sat - ?? (Maybe Out, since we have an early Halloween event).
 
Meal plan for next week.

Monday: got a frozen turkey breast for a great price. I'm going to slow cook it and we will eat some with green beans.
Tuesday: turkey tacos, brown rice
Wednesday: soup and sandwiches
Thursday: I have my workout class. Leftovers
Friday: Ravioli, red sauce, salad
Saturday: helping a friend move into their new house and they are ordering pizza. And halloween candy :)
Sunday: chicken and dumplings

We like this homemade HH! I like that it's got the tomato in it so it's healthier from that alone. I love that it's all homemade so, I know it's not a bunch of preservatives! And the taco flavor is a nice spin on it!

We always make our own burgers, although, I have recently been buying patties for a quickie for the kids. We call my husband's burgers 'sexy burgers' LOL! He throws parm cheese, worsteshire, egg, a little breadcrumbs, Cajun seasoning for him and I'm sure more I'm forgetting but,....YUM!
 
I've already failed 2 nights now. :( DH has been working the mid shift all week, so he is getting off work 2 hours later and getting home at 7 so, it's been just me with homework, my own college work, dinner, kids, and plans last night. The other night I ordered a pizza because I had a test to study for and take by midnight. Tonight, we were gonna grill but, he got stuck an hour later and now it's dark and cold....so take out again! UGH!
 
Start of clean out the freezer month here, so it's 7lb of pork butt this week...
Sun (but 1st) - Chicken Fajitas, Grapes and Strawberries (while the butt cooks down in the crockpot with only salt and liquid smoke)
Mon - Pork Southern BBQ-sauced sandwiches, Pasta Salad with tomatoes, peppers and mozza cheese, Apple slices
Tues - Mexican seasoned Pork, cheese, and veggie quesadillas, Clementines
Wed - Butternut squash and apple soup topped with plain shredded pork (I think this will work - haven't tried pork on top before:), Biscuits
Thurs - Shredded Pork (rib BBQ sauce) over Mashed Potatoes, Green Salad (should finish all the pork, I think)
Fri - Deluxe Cheeseburgers, Fruit Salad (Asian Pears, Grapes, and Apples), Chips
Sat (Halloween) - Pizza, Fruit Salad (whatever fruit is left) or leftover soup, and Candy:)
