Eat at Home 3!

I really need to get back into eating at home. Work and life have been so overwhelming lately. I am still working on a plan for this week. I need to go through what I have and make a grocery list.
 
I love this thread! I typically do a lot of freezer cooking. I don't do a ton of crockpot meals, mainly because I haven't found many recipes that we like. We are a family of four, my littles are 4 and 2 years old and they typically eat everything I make. We live in a very high cost of living area so it can be a challenge to keep our food budget in check and still have healthy meals. We have a small vegetable garden to supplement our groceries during the growing season. I am just learning about canning and am trying to convince my husband to buy a freezer. :)

This week:
Baking - chocolate chip pumpkin bread/muffins
Sunday (today) - Chicken Parmesan burgers, green beans
Monday - Beef in gravy, mashed potatoes, green beans
Tuesday - Italian sausage, peppers & onions
Wednesday - Sausage tortellini with homemade marinara, fresh baked rolls, salad
Thursday - Chicken Tikka Masala, basmati rice, mixed vegetables
Friday - take out night (probably pizza)
Saturday - Crockpot ham & beans, green beans, fresh baked biscuits
 
This week I am making 3 meals with enough for leftovers. I am trying to stagger cook and no cook nights. Getting cooking done with fall sports is tough. Last week we spent way too much on eating out!

Crock pot spaghetti
Cream cheese and chicken chili
Chicken and rice cooked in a bag
 
Things got so messed up this week it's not even funny. I threw out all of my plans and ate what I had on hand, which ended up working out well as I got quite a bit out of the freezer. Still though, I have eaten out a few times as well now that I got paid but I really need to stop doing that. So this week is a HUGE shopping trip and I'm prepping a lot of stuff that will be going in the freezer. Sure it will cost more up front, but I do think it will save me money in the long run.

I've done much better this week! I posted about a week ago, and I actually cooked most of the stuff on the plan! We ate out Sunday at the State fair, but I've cooked every other meal!
Tonight was turkey cutlets, broccoli, salad, and pumpkin muffins.
Tomorrow will be chicken strips, roasted veggies.
Thursday...I think all 5 of us will be eating at different times. I might put chili in the crock pot, or everyone can eat out.
Friday , teriyaki chicken in crock pot, rice, egg rolls
Saturday...gone all day
Sunday...I have meatballs and sauce in the freezer...either pasta or sandwiches.
 
Today was homemade chicken noodle soup and rolls.
Tomorrow leftovers
 
Well... my whole plan for the month is out the window. I needed to catch up on some bills and am living paycheck to paycheck right now. The easiest things to cut back on are "other" spending and groceries. So for this month it has now become "what do I have on hand that I can make into something decent". On top of that, my beefy mac in the slow cooker came out horrible and inedible. I was about to get sick from the texture of the pasta. As such, I won't have it to eat over the next few days. Luckily, I had a $20 put away for times like this so I ordered a pizza and some garlic knots which will be my lunch for the next couple of days (I work nights). So I will only really be short by 1 day and will most likely just make eggs and toast.

Yesterday I cleaned out the pantry and was able to get a good idea of what I have on hand. I also tossed the chicken that I was going to cook and shred back into the freezer as whole breasts give me a bit more flexibility right now. I think I will be good with no grocery shopping except for milk, bread, and bananas (they make a good, healthy, and cheap snack) for pretty much the whole month. May need eggs and jelly near the end of things, but that would still let me get out of the store for less then $15.

So here is my plan for the week. A (W) means I work:

Yesterday: Ordered a pizza and garlic knots
Today: (W) Leftovers
Tomorrow: (W) Leftovers
Saturday: (W(all day)) Eggs and Toast
Sunday: Shredded pork tacos with beans
Monday: Chicken breast over rice and peas topped with alfredo sauce
Tuesday: Soup (not sure what kind yet but I have a couple packets of soup starters in the pantry)
Wednesday: (W) Leftovers
Thursday: (W(all day)) Leftovers
Friday: Burritos
Saturday: (W) Asian style halibut, rice, and broccoli
Sunday: (W) Leftovers
 
Meal Plan for next week! We haven't eaten out in a while and I don't miss it. Lunches for work the next day have been super easy as well.

Monday: Mexican (turkey) meatloaf (standard meatloaf but with salsa and taco seasoning, topped with cheese for the last few minutes of cooking), mashed potatoes (from freezer-need to use up). I use my pampered chef mini loaf pan to make 2 smaller loafs and then I'll freeze one.
Tuesday: I have my workout class. Leftovers. I'll also set aside some ground turkey for H to make tacos if he wants that instead.
Wednesday: Pancakes and scrambled eggs.
Thursday: I have my workout class. Leftovers.
Friday: Ground sausage with chopped spinach (defrosted), ricotta, thyme and other spices, over tri-colored rotini pasta.
Saturday: We have a friend coming to town for work, having him over and grilling steaks and chicken. We'll do salad and baked mac and cheese. We are loving our new grill!
Sunday: Leftovers.

Saturday - brats/peppers and onions/ potato casserole
Sunday - baked chicken, sweet potatoes and roasted beets
Monday - leftovers
Tuesday - beef stroganoff / acorn squash
Wednesday - pot roast
Thursday - chicken stuffing casserole / roasted butternut squash
Friday - spaghetti meat sauce over spaghetti squash
 
sun - chicken & dumplings
mon - zuppa tuscana soup in crock pot
tues - have bunco but dh and dd will have frozen pizza
wed -roast & potatoes in crockpot
thurs - white chicken chilli
 
Tonight-homemade cheese pizzas using naan bread as crusts, apple slices
Tomorrow-chicken and noodles, broccoli
Wed-ham, twice baked potatoes, salad
Thurs-bean burritos for me, taco salad for DH and tacos for the kiddies
Fri-chicken pot pie

Sun-soup and BLT's (placeholder...we may be having company over that night in which case this meal would change)

Wednesday- Cauliflower soup / biscuits

Thursday - Leftovers

Friday - Out to dinner
 
Monday: "two timing pasta" (it's pasta based with red and alfredo sauce), meatballs from freezer, salad.. I'll freeze half of the pasta.
Tuesday: Black bean burritos, spanish rice.
Wednesday: Grilled cheese and soup
Thursday: I have my workout class. Leftovers.
Friday: Homemade pizza!
Saturday: Buffalo chicken mac and cheese, lemon bars

Sausage, black bean, squash, and kale chili, honey cornbread
Two-cheese burgers with the works, roasted green bean "fries", fruit salad
Chicken soft tacos, chips with guacamole, clementines
"Clean out the fridge soup", biscuits - Last week was cheesy potato powder base kicked up with the last of my kale and roasted broccoli, and some carrots/celery/onion sauteed in bacon fat
Boneless chicken buffalo wings, coleslaw, chips with guacamole (football food)
1 Takeout night

I'm jumping on this bandwagon this week too! We used to eat out at least 1x per week until summer when my income took a temporary hit. Then, we did really well eating in most of the time due to the grill. I came up with a plan to dig us out of debt and was doing pretty good until we got sick this week! I don't feel good so we had takeout 2 nights in a row. Oh, well. Here's to a fresh start.
Mon and Wed I have school, so these days I usually do crock pot or something I can make quickly during nap. :)

Beginning tomorrow...

Sun-meatloaf, homemade mashed potato, veggie
mon-ribs, baked potato, corn on the cob (DH is off so, he will cook ribs!)
tues- pork chops, green beans, potato wedges
wed-sausage, peppers, onions, baked beans, fries for kids
thurs-tacos, rice, cornbread
fri-homemade mac n cheese, fish, broccoli
sat-chicken, spinach, bbq potatoes

Can you tell we like potatoes?? LOL! Unfortunately, I am really the only veggie eater other than corn. :(

Been super busy the past couple of weeks, those freezer meals I made have been a lifesaver!

Monday - Pad Thai chicken with noodles and veggies
Tuesday - Taco Tuesday, both ground beef and shredded chicken, rice and beans
Wednesday - mini Oktoberfest, bratwurst, German potato salad, red cabbage (recipe from Biergarten)
Thursday - Orange chicken in slow cooker, rice, broccoli
Friday - subs and chips (which will probably be eaten in the car between events we have)
Saturday - Dinner out
Sunday - DD's volleyball team dinner out
