Wednesday: Breaded Shrimp and Cajun Red Potatoes
Thursday: Chicken Lettuce Taco
Friday: Leftovers

I'm still eating out of the pantry and freezer. I have at least one more week before it starts getting tough!
 
I did really well this week. Mainly because one of the stores had a meat sale; 5 different packages for $20. I did it twice. So i have enough different types of things to keep me not so bored for awhile.

So I'll list the past week but I am still thinking about the week coming up.

Sun--chicken scampi w/ parmesan pasta
Mon--beef stew
Tue--Italian sausage w/ spaghetti
Wed--peachy ham steaks (this was out of the norm for us and really good!)
Thu--beef fajitas
Fri--sloppy joes

Sat--?? still thinking, I'll be back to post when I decide.

Friday: Sweet and Smokey pulled chicken and corn on the cob

Saturday: Taco Soup

Sunday: Baked Chicken, green beans, red potatoes and rolls

Stayed on plan for the week except for yesterday. Ate at Costco's while shopping.

Fri - Baked chicken legs, mac and cheese, sliced apples/pears
Sat - TBD (Leftovers from week or out)

Despite my initial concerns, I adore the pressure cooker my parents got us for Christmas. So far, I have cooked barbecue chicken, beef stew, pot roast, baked potatoes, and just very quickly cooked frozen chicken breasts in it for various purposes. My sister has made ribs multiple times. My parents also made jambalaya from a recipe in the book that comes with it.

It is an electric one bought at an auction as a QVC overstock item. I saw a similar one on Amazon. This has really helped with cooking quickly and I thought people on this thread might be interested since it's such a time saver.

tina.tina - A pressure cooker sounds great. I am just not that brave yet... I will have to overcome my fear and try it one day. It sounds like it would really save time.

this week its myself, DS and Hubs..

Monday - L/O Christmas glazed ham, jasmine rice and fresh garlic green beans - DS had Hamburger Helper
Tuesday - Dreamfield spaghetti with frozen meatballs and sauce - Ds will have meatball subs
Wednesday - DS has a Hockey game about 1 hr away so I think we'll be eating out .. maybe just subway
Thursday - Pork chops, stuffing, sauteee zucchini and brussells
Friday - Pizza night
Saturday - we have another away Hockey game so it's likely we will eat out again.
Sunday - Shepards Pie..

Unstuffed cabbage! Cook boil-in-bag rice in a 12 inch skillet according to package directions, drain and set aside. In the same skillet, brown a pound of hamburger, drain and set aside. In the same skillet (see a theme here?), cook a one pound package of coleslaw mix until tender.

Mix the rice and hamburger back into the cabbage, add a 15 oz. can of tomato sauce and heat through. Add cider vinegar and brown sugar to taste. You can do the whole shebang in under a half-hour...quicker if you use already cooked rice. You can also do it a lot slower if you don't mind taking a knife to a head of cabbage.

Mine is the stove kind. The only thing I have made is braised short ribs. I make my hubby release the pressure. I am more of a crock pot cooker. I like the convenience of having it all ready for me when I get home. http://tinkmomfoodie-foodobsession.blogspot.com/search?q=pressure+cooker

Sweet Italian Chicken, broccoli, raspberries and cream (for 2 days)
Slow cooker shredded chicken with salsa, black beans, brown rice, blueberries
Leftover shredded chicken with barbeque sauce over corncakes, green beans, peaches
Roast beef, onion and cheese sandwiches on potato rolls with green peas and sweet potato hash
 
Monday pizza

Tuesday leftover turkey green beans, bananas

Wednesday Leftover ham, cabbage, black-eye peas

Thursday - Chili

Friday leftovers
