My menu for this week:
Monday: soup and sandwiches (always need something quick and easy on Mondays, we all get home from work/activities around 6:30pm)
Tuesday: pork chops (they were b1g1f this week) and rice or noodles
Wednesday: homemade ham and cheese calzone and oven fried potatoes
Thursday: leftover night
Friday: pasta of some sort with salad; frozen Gorton's or veggie burger for my DS that doesn't like pasta

Yesterday was my birthday so we ate out yesterday and did "whatever" today (Sundays are always a no-cook day for me), so I need to get back into a routine.
 
I like it a lot but sometimes there are those people you can't draw. We are right next to the infusion department and see a lot of sick people where they have no veins left due to chemo or in the elderly where their veins collapse. There have been a few times where not even my trainers could get blood from a patient.

There is such a fear that people have built up about getting their blood drawn especially when they have to have it done often like for people that need their blood constantly monitored. That part has been hard not to take personally. Also I don't think people realize how important it is that we do our job right so the results aren't erroneous.

I am in the home stretch now and am feeling more confident every day:thumbsup2

Tonight we made good use of an Outback gift certificate (from Christmas). We did curbside takeout, so technically we still ate at home. :upsidedow

Mon.- Quesadilla casserole
Tue.- Mediterranean Herb Crusted Tilapia w/ steamed butternut squash and something green
Wed.- Pork chop schnitzel w/ field peas and snaps
Thurs.- Cinnamon French toast w/ turkey sausage, yogurt,fruit
Fri.- Caribbean Grilled steak w/ Asian medley vegetables, steamed
 

Saturday - Chicken tenders, pasta salad, and squash
Sunday - Ranch baked tilapia and broccoli casserole
Monday - Pork chops, mashed potatoes, and green beans
Tuesday - Taco salad
Wednesday - Queso chicken, rice, veggies
Thursday - Baked salmon, creamed spinach, and rice pilaf
Friday - Grilled london broil, corn on the cob, and sauteed peppers & onions
 
Sunday we had juicy Lucy's on the grill. They're stuffed burgers. Mine was stuffed with pickled jalapeños and american cheese, my husband and mom has theirs stuffed with havarti cheese. And waffle fries on the side.
Monday we had a late doctors appointment for an anatomy ultrasound and it took forever because the baby wasn't cooperating so we hit up Longhorn for their 2 for $25 dinner. Very yummy.
Tuesday we had meatloaf, mashed pitatoes, corn, and gravy.
Wednesday we had chipotle lime chicken, yellow rice, and bananas.
Thursday we had chicken cordon bleu, buttered noodles and asparagus.
Friday, today, we have family coming in, my aunt is coming from Tampa for my baby shower tomorrow and I want to make a yummy home cooked meal. I think I'm making scalloped potatoes and New York strip steaks.
Tomorrow is my baby shower and they are having it catered by my favorite Italian restaurant and I plan on eating it all day lol! Yay for penne a la vodka!

Monday: Homemade Pizza

Tonight is blue cheese stuffed chicken breasts and baked potatoes. I will probably make arroz con pollo tomorrow.

Korean Chicken Wings (our battered and fried wings tossed in sauce mix from Korean Beef recipe)
Loaded Potato Skins (going to attempt homemade)
Salad

Sunday:
Deer Steak
Broccoli Rice AuGratin
Southern Style Green Beans

Meatless Monday:
Potato Cheese Soup (using potatoes scooped from Saturday's skins)
Crescent Rolls

Tuesday:
Spaghetti with Meat Sauce
Steamed Broccoli
Texas Garlic Toast

Wednesday:
Lime Chicken Tacos
Ranch Style Beans

Thursday:
Manwich Muffins
Tator Tots
Pears

Friday: (gonna have a house full of giggling tween girls)
Take Out Pizza
Brownies

Planned out the next week. Really helps me eat down what we have and not waste as much food.
Tonight 3/8 was breakfast. French toast, choc chip pancakes, ham and fruit.
Sat. 3/9: steak and noodles with gravy, a deconstructed stroganoff I guess.
Sunday 3/10: leftovers from the week
Monday 3/11: make your own burritos. Giant had Perdue shortcuts b1g1free this week, will also have rice, salsa, avocado, black beans etc.
Tuesday 3/12: spinach tortellini with salad; a veggie burger for my anti-pasta son.
Wed. 3/13: the guys are on their own. I am having a medical test and will not be up for cooking.
Thurs. 3/14: burgers (we use ground turkey) and red potatoes.
Fri. 3/15: younger son is turning 10 and having a few friends over for pizza. Little Caesars hot and ready $5 each
Sat. 3/16: pork chops and some kind of rice.
 
It has been a busy week here.

Wednesday I ended up working late so we had Boston Market
Thursday we had sesame chicken with rice
Tonight we are having french toast with sausage and fruit
 
Last night we had chicken in roasted tomato sauce with angel hair pasta and salad.

Tonight we had leftovers.

Tomorrow (Monday) the plan is pork chops with sweet potatoes and apples.
 
Mon.- Turkey and bean burritos w/ lettuce, tomatoes, sour cream (made w/leftover taco mixture)

Tue.- Turkey & cabbage soup. If I find the recipe! It's really good, made w/ shredded cabbage, turkey, veggies, tomato sauce, etc.. Hearty.

Wed.- Ham steak, baked beans, corn

Thurs.- We didn't have breakfast for dinner last week. So this week it is. Either scrambled eggs, turkey sausage, and orange glazed biscuits or french toast with the turkey sausage, and yogurt.

Fri.- Bacon, cheddar cheese burgers, home made FF or kettle chips.
 
I went clearance produce crazy yesterday at the grocery store but for .79 a bag, I am sure you would too! I got about 4lbs organic on the vine tomatoes. I am going to make some sauce and can it. And that is going over the clearance egg plant I got for the same price for egg plant parm. Tonight is crock pot beef stew over bread. (Long day at school for me) I also stocked up on my 20lb bag of rice. It was an amazing price. I also got some mini bananas on clearance and I will be making bananas Foster.
Saturday, I will probably be making BBQ corned beef with cabbage and honey carrots.
Last night was chicken fajitas and beans.
 
What are manwich muffins??

Grands biscuits "smooshed" into a muffin tin, fill it with Manwich and top with cheese. Bake til the biscuits are done and cheese is melted.

So Saturday was DD10's big birthday party. She wanted an American Girl Tea Party...and boy did I work my tail off for three days getting ready for that thing!! :crazy2: The menu was this:

Tea Sandwiches (cucumber, pimiento cheese, pb&j, ham and cheese on hawaiian rolls)
Veggie Tray
Cheese and Cracker Tray
Grape Salad
Chocolate Dipped Strawberries
White Chocolate Dipped Strawberry Marshmallows
French Vanilla Cupcakes with Strawberry Cream Filling and Strawberry Buttercream Frosting

The girls played American Girl Bingo, Croquet, and I also got a "barbie" sketchpad and cut her name off. They each had a sketch of girl head to color and put make-up on...I called it make you own American Girl. :thumbsup2

The party went great and I was EXHAUSTED when it was over! :faint:

This week my entire family is out of town...except for me. :sad: DH is on a mission trip to an Indian reservation in Montana, and the kids are spending the week down south with grandparents. My menu looks like this...

Spanish Rice with Ground Beef, Oven Roasted Corn
Chili Mac (chili from the freezer) and Green Beans
Soup (from the freezer) and Grilled Cheese

I will eat on all of the above just whenever this week.
 
Monday - mom and I went to chili's because we had a free appetizer coupon and shared a meal so it was very affordable meal and we were stuffed! The portions are huge on their chicken crispers plate.
Tuesday - chicken fajitas with peppers and onions, ground beef tacos, and refried beans. Served with flour tortillas and hard corn taco shells. I don't usually make 2 different meats but I have a pack of chicken breasts in the fridge already defrosted and it needs to be used but it's not enough to feed all three of us so I'm making ground beef tacos too.
Wednesday - pounded out minute steaks, breaded and fried (in spanish we call them bistec empanizado), fresh chopped red onions and parsley on top, served with either baked or roasted potatoes and carrots.
Thursday - I have a late doctor's appointment (gotta love going to the OB and the fetal specialist weekly now) so I think it'll just be McDonald's or some other fast food, lol.
Friday - breakfast for dinner, fried eggs, turkey sausage, toast/english muffins, and maybe homemade waffles if I make the batter the day before.
Saturday - we're hitting up costco so I'll know what we have when I buy it! My freezer is getting pretty low on meats so I need to take an inventory, lol.
 
This week is clean out the freezer week.


Mon: ham and cheese on Hawaiian bread with hash browns

Tues: meatballs with beef gravy over steamed rice with sliced peaches

Wed: crockpot cheesy chicken and rice, broccoli

Thurs: crockpot roast beef, noodles, green beans

Friday: chicken patty sandwiches, fries or tator tots or both since DSSs will be here and we have one bag of each in the freezer.

That will clean out the freezer and I will go to grocery store on Saturday.
 
I couldn't find the recipe for the turkey and cabbage soup. So I winged it. It turned out really good!

I did not feel like shredding cabbage, besides the cabbage in the grocery store looked puny. I bought a package of coleslaw and used that instead. :) I sauteed diced yellow onions and added them to a pot of the shredded cabbage with about a cup and a half of beef broth. Cooked it until the cabbage was translucent. Added garlic and some spices here and there and let it simmer. Browned and drained ground turkey and added that to the cabbage mixture. Then added a large jar of tomato sauce, about a cup of water, added drained cans of corn, green beans, black beans, garbanzo beans. I had a bowl of leftover baby lima beans, that went in too. Added some more seasoning and let it all simmer some more.

We had the soup with corn bread. Loved it! It made a lot. We'll probably have some for leftovers another night.

I read this a few days ago and put it on our menu for the week. Tonight we had french toast, sausage and fruit and my kids killed it. Thanks for a great suggestion. :goodvibes

Glad it was a success. Sometimes the simplest meals are the best.

Last night we ended up with pizza as I worked until late and had no desire to cook.

Tonight will be either sloppy joes with chips and fruit or beef stew over noodles.
