Subscribing to this thread!! We are a family that has struggled way too long with spending too much going out to eat. We looked at our bank statement one month and it was almost $800 going out to eat!! We've gotten MUCH better, my dd (20) always has her boyfriend over, and my 8 year old nephew has come to live with us, needless to say our food bill has gone up and definitely can't afford the eating out! I need a support system!! lol~~~Oh, and I love to have an idea of how much the dinner I cook costs me, I always think "Hey, if we'd had gone to Casa Ole, we'd have spent 65.00, but I made this spaghetti and garlic bread for only $14.00". I'm a little nerdy like that!! hehe :goodvibes

Way to go! I love finishing a meal and telling my husband how much money we saved. Whenever we want to get lazy and eat out I tell him how much it costs us for a simple meal out and how many rounds of golf he could play if we saved that money :thumbsup2

Hey all...

Does anyone here have any links to some awesome healthy crockpot meals or super fast and easy meals?

At the end of August I will be starting back at school and will have 1 class 4pm-6:50pm on Mondays and then 7pm-9:50pm on Wednesday and Thursday. On Mondays I would love meals that take almost no time to do (sandwiches, salads, ect) so I can throw it together when I get home. For Wednesday and Thursday I want to do something in the crockpot on one day so I can eat before I leave and mom can eat when she gets home. The other day would just be a "fend for yourself" day."

My go-to simple meal is foil chicken. Start with a large square of foil, place a thawed chicken breast in the middle, add some strips of carrot and zucchini (or whatever you like, onion, mushrooms, broccoli) then squeeze some dijon mustard over the top and paprika, salt and pepper. Then close up the foil pouch and pop it in the over for about 20 minutes depending on how thick the chicken is.

You can also take a look at "A year of slow cooking" blog. There are some really basic recipes that are great for families just remember that not everything is better in a crockpot ;)

Good luck with your menus this week everyone!

OK We are starting to try to eat a little more paleo/primal starting today. That means more eating at home for sure. So, here is the menu we are doing for the week:

Monday - Roast, Carrots, Cauliflower "mashed potatoes" (I've never done these before but I have heard really good things about them. We'll see!), and Mushroom Gravy
Tuesday - Pork Tenderloin, leftover "potatoes", sauteed Zucchini & Squash
Wednesday - Tacos (with lettuce as the wrap part for the adults, made with ground turkey, avocado, tomatoes, and a touch of cheese)
Thursday - Spaghetti with Turkey Meatballs (spaghetti squash instead of pasta for the adults), with Broccoli
Friday - Corned Beef & Cabbage, Carrots
Saturday - Big Salads
Sunday - Leftovers (or salads again if no leftovers)

I haven't stopped by in awhile. I'm going to catch up on reading this thread for some ideas! :)

Happy Monday!

My week looks a lot like yours. :) We are having tacos tonight. I cooked a double batch of ground turkey and halved it. One night we'll use half with the tacos, another night the other half for spaghetti sauce (with garlic bread & salad). We're having hamburgers and homemade FF probably Tues. night. I'm thinking we'll have a baked potato bar on Thursday night (I'll put out a bunch of toppings and have some grapes and cheese on the side). Friday night, probably breakfast for dinner, scrambled eggs, apples and yogurt dip, corned beef hash or bacon, and orange rolls. The kids love it. I'll probably switch the nights around. Mostly quick and easy stuff.

We were eating pizza on Fridays like clockwork, but we are so burned out on pizza. Next week I might make a calzone, spice it up and add some different ingredients so it isn't too close to the pizzas we've been getting. :upsidedow

We had a vegetarian night last week and it was a hit. Yea! So I'm going to aim to have one at least once a week from now on.

I am low carbing and don't feel like shopping so my week is going to be something like this:

Monday: Hamburger
Tuesday: Buffalo Chicken
Wednesday: Teriyaki Chicken
Thursday: Ham & Cheese omelette
Friday: Hamburger

I'll have a salad as a side with dinner or lunch to get in some veggies.

I am low carbing too! Sometimes it makes it really hard to feed the family regular meals, and me something totally different. Tonight we're doing burgers, so I'll have just the patty, cheese and a side of green beans or something. I also like to take a chicken breast, cut it into chunks and wrap bacon around it and throw it into the oven. That's always a quick thing to throw together when I make something like spaghetti for the family, and it's yummy!!
How are you doing on the diet so far? I've lost about 20 pounds so far.

Today is my first day, so I haven't lost a thing yet...LOL I have done this in the past and find it a little easier than counting calories and all that. DH is doing some shake/power bar diet his doctor put him on, so I don't have to worry about cooking for him. :thumbsup2

That's fantastic about the 20 pounds!! And the bacon wrapped chicken sounds amazing!! I'll have to try that. How long have you been doing LC?

Oh I love this thread!!! Just ran across it. I am starting WW again so my poor family has to eat healthy ......

Tonight--

Tuesday--

Wednesday--
Grilled Tilapia
Steamed--squash, zucchini, onions, mushroom -in a foil pack on grill
Dessert for them--brownies w/ icing (made w/ applesauce instead of oil)

Kind of boring I guess...I will get better ;).

Well, I did it back in May/June and I lost 25 pounds, I got off of it and have gained 5 back. :sad2:

So, I just started again yesterday! I am not counting the lapse there...lol. I have been on it before though too and have lost as much as 45 pounds in 3 months. I do find it much easier than the calorie/fat counting, but sometimes those cravings kick in and they are soooo hard to beat. After my 1st full week, I'm usually okay though. Good luck!

Hello everyone! How is everyone doing? We have gotten way off track and we need to turn around and stick to eating at home. We have just over 100 days until Disney :thumbsup2 and we need to save more money.

Tonight we had
Chicken in the crock pot with onions and peppers. Bake sweet potatoes and summer squash.

Tomorrow we are having pork chops and home made apple sauce with salad

Wednesday will be grilled ham streaks with mango salsa with rice and salad

Thru day sausage and pasta

How do you all stay on track? What keeps u motivated ?

Last week was BAD for us. I think I cooked one night. I just wasn't feeling it and we got entirely off track. Back on the wagon this week though! Not that we had much of a choice. I had to start paying DD's tuition on Aug 1, which I didn't think I had to do until Sept 1, so we are eating out of the freezer and pantry for the next two weeks. I only had an $80 budget for the next 2 weeks and I went to the store tonight and stayed $10 under! So here's our menu until our next payday:

Mon: pancakes and sausage links

Tues: Dinner out with my BFF (our only meal out this pay period)

Wed: Spaghetti and garlic toast

Thurs: Crockpot cheesy chicken and rice

Fri: Chili dogs and baked beans

Sat: Cookout with the SILs - we're taking hamburgers, buns and potato chips

Sun: Lake Erie Perch!!! And French fries

Mon: Chili

Tues: Crockpot roast beef, noodles and mashed potatoes

Weds: Chicken bacon wraps and pasta salad

We ate out last night:sad2: but at least I had a kids eat free coupon:thumbsup2 Tonight is porkchops in mushroom gravy, egg noodles and red cabbage.

Tonight is going to be the Balsamic Glazed Salmon and Sweet Potato. I was originally going to grill, but today has our highest chance of rain for the week so I switched things around.

Tonight is open house for our oldest DD's school. Dinner had to be quick and easy. Last night I baked some large potatoes. This morning I scooped them all out. Dinner tonight:

Chili in Spud Bowls
Grapes
