Eat at home 2!

I have committed to not buying food, getting take out or going out to eat (except for special social occasions) for the month of June. Well, I'll buy food if I run out of something crucial but I am not stocking up or getting extras. This week looks like this:

Wednesday: salad & whole grain chicken nuggets
Thursday: salad with grilled chicken
Friday: macaroni with chicken & vodka sauce
Saturday: ?? I will be at a day long event on Sat and not sure if I'll be home in time for dinner. If I am, I'll have a burger.
Sunday: tortellini with vodka sauce

I have been out of town all weekend spending time with my new boyfriend (I still feel like a teenager when I say that :rotfl2: ) and his friends. It was a lot of fun and it looks like I fit in pretty well with his "main" friends. So I am relieved to have passed that test!

Anyway, tomorrow is grocery morning, so here is my menu:

Monday: Grilled Ham Steak, Sweet Potatoes, and Salad

Tuesday: Margarita Chicken and Mexicorn Spaghetti with Chicken Sausage and Garlic Toast

Wednesday: Glazed Salmon with Broccoli Rice

Thursday: Sweet and Sour Chicken Skewers and Salad Margarita Chicken and Mexicorn

Friday: Cajun Chicken Pasta and Garlic Toast Out of town most likely

Saturday: Out of town most likely Sweet and Sour Chicken Skewers and Salad

Sunday: Chicago Pizza and Salad

Had to switch things around. Yesterday we had Spaghetti with Chicken Italian Sausage and Garlic Toast because I was not feeling good come time to make dinner. Then, we are expecting bad weather on Thursday so I can't count on being able to grill. Finally, I will be out of town on Friday instead of Saturday.

Changes are in red.

I am making crock pot breakfast casserole for dinner tonight. I work tonight so it will be ready when my mom wants to eat around 6 and then it will still be warm when I get home after 8pm

DH made a huge batch of homemade spaghetti sauce last night. We are usually able to freeze enough for 6 meals when he does that. So tonight's dinner:

Spaghetti w/ Meat Sauce
Steamed Cali Mix
Garlic & Cheese Toast

Friday – my 8 year old and I will get something out....my 12 year old and husband will be at our church's Fast for 30 event

Saturday – there will be a pot luck at the end of Fast for 30, I will bring chocolate sheet cake that I've been dying to try from Pioneer Woman but can't justify just making for us at home and Jamie's Cranberry Spinach Salad from Allrecipes since my husband is vegan and I want to make sure he has something to eat at the potluck

Sunday – another potluck in the afternoon - will bring mexican bean salad (also from Allrecipes)

then in no particular order:

chicken tacos with lettuce/tomato/avocado

sloppy joes (already made and frozen in freezer), coleslaw

taco soup (already made and frozen in freezer) with cheddar cheese, sour
cream, tortilla chips

hot dogs (have frozen in freezer) with sauerkraut, baked beans

sweet and sour chicken over jasmine rice

bruschetta chicken bake

black eyed burgers with homemade fries

we almost always have salad made as well that can be eaten with meals

I made mini curry chicken sandies on dinner rolls, home made sloppy joes and sweet potato fries, brats and baked beans last night, and tikka masala and cous cous. Tonight I think it's going to be fish fry night and fried egg plant strips. I still want to make blue cheese stuffed chicken breasts and maybe breakfast for dinner.

We had tater tot casserole last night- threw some black olives in with the hamburger cause we love them and DH needs more HDL cholesterol. We've been doing lots of toasted sandwiches with deli meat.

I woke up sick as a dog today. I think it is from standing outside in the cold rain yesterday at the cemetary for my Great Aunt's funeral. So tonight my mom made us homemade chicken soup.

So I'm trying to do better. We really need to be eating better at home. You guys are great inspiration!! Do you have the recipe for the Asian salmon with ginger slaw? That sounds amazing!

Saturday - Family BBQ - bringing marinated chicken breasts for the grill and limoncello :)
Sunday - Grilled asian salmon with ginger slaw and rice
Monday - Steak skewers, grilled veggies and tortellini pasta salad
Tuesday - Burgers, corn on the cob and tomato/cucumber salad
Wednesday - Garlic lime talapia, parmesan pasta, and broccoli

Firiday - Pizza

Have a great Memorial Day!!:yay:

This week should be interesting. I want to make some room in the freezer and use up some things in the pantry so I only spent about 40 at the store on milk/veggies and breads.

Sunday...Roast Chicken and gravy, corn, asparagus, mashed potato

Monday... Hamburgers/Veggies Burgers, Fries and carrots

Tuesday.. Breakfast for dinner (pancakes/eggs/smoothies/bacon)

Wednesday... Spaghetti Pie and Garlic Bread

Thursday...Grilled Ham and Cheese and soup

Friday.. Order pizza with coupon, salad

Saturday... Wraps

Sunday.. Grocery day.

Working on my menu for the week and then the grocery list. I was out of town starting Friday morning and got back late yesterday. Today I am a bit sick. Hoping it is just allergies (forgot to take my meds with this weekend). Then mom is going out of town at the end of the week. So, it will be an odd menu.

Tonight is a Lou Malnati's Chicago Deep Dish pizza from the freezer with salad.

I will post back when I have my menu done!

this weeks menu with Lemon Cake....
Bean and Cheese Tamales - this will be my first time making everything but the husks..... (Soaking my beans right now)

I love making tamales! I usually make mine with a pork and chicken mixture. But I make enough to freeze (probably around 8 dozen)
http://tinkmomfoodie-foodobsession.blogspot.com/search?q=Tamale

Friday I made beer battered fish and egg plant fries dipped in Panko. I used a dark beer and you really could taste it in the batter. I like Tilapia because it's mild and very inexpensive.

Last night I made a stir fry with sugar snap peas and pork tenderloin. We will be trying to live off our freezer this week until I can go grocery shopping on Friday. I think crock pot lasagna and crock pot scalloped potatoes are in our future:rotfl:
