I have been out of town all weekend spending time with my new boyfriend (I still feel like a teenager when I say that) and his friends. It was a lot of fun and it looks like I fit in pretty well with his "main" friends. So I am relieved to have passed that test!

this weeks menu with Lemon Cake....
Bean and Cheese Tamales - this will be my first time making everything but the husks..... (Soaking my beans right now)
I love making tamales! I usually make mine with a pork and chicken mixture. But I make enough to freeze (probably around 8 dozen)

Friday I made beer battered fish and egg plant fries dipped in Panko. I used a dark beer and you really could taste it in the batter. I like Tilapia because it's mild and very inexpensive.
Last night I made a stir fry with sugar snap peas and pork tenderloin. We will be trying to live off our freezer this week until I can go grocery shopping on Friday. I think crock pot lasagna and crock pot scalloped potatoes are in our future![]()
