Eat at home 2!

It may sound silly to some of you, but I am really proud of myself right now. We haven't been out to eat since last Thursday evening...a whole week! It really is a milestone for us, particularly in a week that had a riding lesson, a basketball practice, an evening doctor appointment, along with our usual two kids in school and two full-time working parents.

I've got dinner started for tonight and a plan in place already for tomorrow. What a great feeling! I feel like Mom of the Year! ;)

Not silly at all! We made it all week too! Gosh, we actually haven't ate out since we returned from Disney Dec 18th :thumbsup2 But tonight we're ordering chinese (although I keep thinking but there's allllll those leftovers in the fridge!!) lol
 
We are really good about not eating out for dinners. We usually save that for a special treat. Where I am having a hard time is my dh wants to eat out for lunch every day. He says that he just can't remember to pack a lunch and if he does pack it, he forgets to bring it to work with him. Can anyone give suggestions on how to get dh to pack a lunch instead of going out every day? I'm sure it would save us a grundle of money if he would!
 
I love reading this thread. I just posted on FB to see what my friends were having for dinner. I felt awful. Almost all of them were eating these incredibly healthy meals. I felt embarrassed to say I served Chicken Parm, Broccoli and Texas Toast :rotfl2:

Sounds like my husband! Does he pay by debit/credit when he eats out? What I did was when our monthly statement came I showed DH all of his debits for the month. It was actually quite shocking when it all added up :headache: Since then he is better about packing a lunch.

Not silly at all, I hear you....I wanted to grab lunch out today, I work at home but was stuck in a courtroom today for hours!!!!!! I almost went out to lunch but once I thought about it I realized that it was just as easy to come home to eat leftovers.....yay me!

Dinner was cabbage ham potatoes in the crock, applesauce, And corn muffins. Tomorrow meatloaf for the kids, dh and I have a work function and we get to eat out for free...fun!

I am thawing chicken in the fridge for saturday dinner, trying to beat my aversion to thawing....
 
I have been craving fried chicken and only like the kind our local grocery store makes. So while I was there I grabbed some for dinner. I made mashed potatoes and brocoli at home to go with it. A semi homemade meal.

I had everything on hand to make this last night, so I made it instead of the chicken pasta, it was really good!:thumbsup2. My 5 year old asked if it was her birthday:lmao:, she always requests spaghetti, & her birthday is on Monday. Thanks for the recipe! Tonight is broccoli cheese soup with some cut up salami, cheese & crackers.
 
well didn't get to make the baked spaghetti last night had to swap it with the Pizza I was planning Sat night - we worked late and got home late was just starving! so tonight is the night for our baked spaghetti and tomorrow (sat) now will be the chicken stir fry!

This next week and the one following are a bit odd. My mom is an assistant manager for an off campus college bookstore and this is one of their busiest times (Spring semester starts next week). So, the meals are either just for myself or things I can make extra of for her to reheat for dinner.

So next week's meal are:

Monday: Patty Melts and Baked Seasoned Fries (carried over from this week because I won't be home tomorrow night)

Wednesday: Blackened Fish Sandwiches with tzatziki and some sort of vegetable (whatever looks good in the freezer section)

Friday: Skinny Baked Chicken Parmesan, Spaghetti, and Cucumber and Onion Salad

Saturday: Healthy, Homemade Chicken Noodle Soup and Crackers

Last night I made 8 quarts of chicken stock. I thought you guys would be the only ones that would understand why I was excited to do that!

If I can make it through this weekend, I'll be in good shape. There's so much going on and things to do (science fair stuff, basketball game, company, Christmas decs to get down, library books to return, etc. - plus, I'm starting to teach the next Sunday School session tomorrow so need to plan that). Sunday lunch is usually my toughest meal to do at home, but I'm determined this week.

Saturday breakfast: waffles, sausage, pineapple
Saturday lunch: homemade pepperoni & pepper pizza
Saturday dinner: sausage and rice casserole w/ peas and carrots, green beans

Sunday breakfast: cinnamon toast
Sunday lunch: split pea soup (from freezer), pappadums
Sunday dinner: chicken & vegetable red curry, rice, dumplings

Snacks: cereal bars, clementines, yogurt, or pears

Then I'll go shopping Sunday evening after the kids are in bed, so can reboot the week.

Oh my! Your menu is just about a dream menu for me! Can you send or link the recipe for the snapper? I have never made it, but that sounds really, really tasty!
 
Last night we used the kids' book-it coupons from school & picked up 3 free pizza hut personal pan pizzas, dh ordered a small order of wings, & I have been fighting a cold so I just warmed up canned chicken soup. Tonight the plan is broccoli cheese soup w/ meat, cheese & crackers.
 
This week I am determined to stay GF! It's sooo hard, and raises my food budget! I won't put how I will make substitutions for myself here, so if you see a pasta/bread know I will not be having any!

Saturday-CORN! Clean Out Refridgerator Night!
Sunday-Barbecued chicken wings, potato salad, baked beans, salad
Monday-Grilled hot dogs, potato salad, baked beans
Tuesday-Mexican soup, tortilla chips
Wednesday-Chicken tettrazini, salad
Thursday-Taco salads, fresh fruit
Friday-Black bean chicken tostadas, fresh fruit
