Would you mind sharing your Artichoke and Spinach Pasta recipe? I have been craving something meatless that my family would enjoy.

Reminder to self...I am no longer 21! We went to the Brewer game last night and tailgated. I made Nathan's hot dogs and we had some chips. I made some vodka lemonades (maybe one too many) and brought in a a cooler with peanuts and juice for my DD. We got a soda in a cup..$5.00! I brought in some pocket shots and made a drink out of my soda. The baseball tickets were only $4.13because of a special Friday the 13th promo.

Today I am improvising. I have to go grocery shopping tomorrow. We have tickets for a day game tomorrow that I also got for $4.13 but I am not sure if we are going. We would have to leave early to get the kids from school.

Last night was Shrimp with lobster sauce (my first time trying to make it) it was good, but nothing like I am used to.

Egg drop soup (wonderful) and fried rice (really good)

Tonight is Salisbury Steak over egg noodles, and tomorrow is Chicken and dumplings.

Friday we are going to see Mary Poppins at the theater and will eat out...

Tonight is Grilled Chicken with Lemon and Oregano and Grilled Balsamic Vegetables.... if it's not storming. I can grill in the rain no problem, but I won't do thunder and lightening. If the weather is bad, then I will pan cook the chicken and saute the vegetables most likely.

My deli was closed forever by the time I got home last night :( So I made baked buffalo chicken fingers with sweet potato fries. There's leftover chicken so I'll have them tonight but I didn't like the SPF - they are going in the garbage.

I modified this week a bit:::
Wed: buffalo chicken bites
Thurs: burger on an english muffin
Fri: tortellini with vodka sauce

The rest will stay the same...
Saturday - Pulled pork sandwich with sweet potato fries
Sunday - Spagetti & meatballs
Monday - BBQ chicken & stuffing
Tuesday - tortellini with vodka or marinara sauce
Wednesday - Hamburger

I love Lean Cusine's chicken terryaki so I made something similar last night. I used my onion soup that I freeze and made a gravy with some flour and grilled the chicken on indoor grill. I served that over rice.

The plans for this week include crock pot lasagna and crockpot mac and cheese. I am on a very limited budget this week. This check is really small because of Spring Break. Thank goodness for a full freezer:)

3 more weeks of school for me :cool1: Summer school starts the third week of June! Boo!!:rotfl:

Tonight we had macaroni and cheese with salad.

I am proud though, that since going back to work we have only gotten takeout once.

Making Chicken Hash and Oven Roasted Corn for dinner tonight~ already got my veggies and chicken chopped, ready to toss in the frying pan! :woohoo:

Tonight I'm cooking chicken, penne pasta and asparagus and then adding the garlic philadelphia cooking creme. I made it one other time and it turned out great. Super easy.

Tonight was a Cashew Pork and Vegetable Stir Fry over rice. Really simple and good!

Not sure what I'll make today, because I have some leftover homemade Thai green curry and corn chowder in the fridge. Finals weeks is approaching and I'll be moving out of my university apartment next weekend, so I want to keep grocery shopping to a minimum!

Friday - yellow garlic rice with black beans
Saturday - spanakopita
Sunday - lentil meatballs with spaghetti

Dinner tonight was chinese take out. It has been a long week and it felt nice to be able to treat my mom to dinner.
