Easy Salsa Recipe? Please Share!

I have alot of tomatoes that I would love to make into fresh salsa. I don't really can but would love a recipe that I could freeze? Anyone have a fairly easy recipe to share? Thanks so much! :)
 
I just chop a bunch of tomatoes add some chopped white onion, cilantro, garlic, and mix it all up. I've run it through a blender to make it smoother but I like mine chunky. I don't know how well it freezes, I never have any left. lol I would imagine it would work though. You can also add some chopped tomatillos, they add a really neat flavor.
 
I always make a double batch of this as it goes quickly! I never freeze it because I love it fresh...I am asked to make all the time!

5 ripe, garden fresh tomatoes
1 cup white onion
5 serrano chili peppers (de-seeded, and use gloves to avoid chemical burns!)
other peppers will work, but don't give it the same taste...
1 TBL fresh cilantro
2 tsp salt
4 tsp lime juice

Chop everything up as you wish ( I use a small food processor, but I try to keep it chunky!)

Chill....ummmm, I want some right now!

Girl, I hear you! We have tomatoes coming out our ears. Gosh it seems like I could easily make 2 batches of sauce a week, but I really only make 1 and give the rest to family and friends. I have all these plastic containers in the freezer with all my sauce. I told DH to give more away, but he seems to think I need to make more sauce. He says it takes better then the jar, so he wants me to keep making and freezing. I will admit he picks all the tomatoes, onions, garlic, basil, oregano, and parsley from the garden. I just make the sauce, his job isn't any easier.

I say, bring on the salsa! I am sick of making sauce.
 
I often add chopped red or green peppers to mine too...my family likes it that way and they get more veggies too. I dice them very small.
 
Thanks for the support guys! Any tricks on how to freeze it well? I'm excited to try this. I've been giving away veggies by the bag at work! Now I have to stock up on chips! Thanks again, any more tips and recipes welcome! :thumbsup2
 
EASY??? A jar of ChiChi's. I canned tomatoes once a few years back and it was just not worth the trouble. I know fresh is best.
 
I normally just use freezer bags for stuff like this. With something runny I would double bag it. You can also find good Tupperware/Rubbermaid for freezing but I think the freezer bags work best. You might want to fill the bags and lay them flat on a cookie sheet before freezing, the veggies may thaw better that way.
 
Easiest recipe there is...

Cut tomatoes
Cut pepper (optional)
Cut Cilantro (optional)

Mix above w/ McCormick salsa mix (found in .7oz envelope in gravy section of store) Refrigerate for 30min. Tastes great!:thumbsup2
 
My favorite is alot like Jodeeluvsdisneys.

2 large tomatoes peeled and chopped
4 tomatillos husked and chopped
2 fresh Anaheim peppers seeded and chopped
5 green onions chopped
2 fesh jalapneos seeded and chopped
1 teasp ground cumin
1 teasp fresh lime juice
1 teas sugar
1 teas minced cilantra
1/2 teas ground pepper
1/2 teas salt

It is from a Junior league of Denver's Creme de Colorado cookbook. I have used it as a base and modified it to whatever ingredients I have on hand.
