Easy recipe using ricotta cheese?

A local Italian grocer has fresh ricotta cheese on sale for only 99 cents a pound this week. I just bought 3 pounds, not quite realizing that it only keeps for about 3 days before spoiling.

Does anyone have an EASY recipes that use ricotta cheese? All I can think of is lasagna.
 
I just checked the Food Network website--they have a lot of recipes that use ricotta. I saw a crostini recipe that looked very easy--toasted bread, ricotta and halved grapes. Also a pizza recipe that used ricotta instead of mozzarella. There were some dessert recipes too.
 
Freeze it. Thaw it completely before use.

Use some to make stuffed shells. There is an infinite number of ways, but an easy way it to add herbs to the ricotta (use what you and your family like) an egg, and some sausage, or some spinach, or both or some parmesan...

It's a base ingredient and you can essentially do what you please with it.

Stuff it into partially cooked jumbo shells, cover in sauce and bake until done.

You can also use it as a base for desserts (cannoli are stuffed with sweetened ricotta) by whirring it until smooth and adding mascarpone, or whipped cream (or both) and some flavorings (chocolate chips are good) nuts, etc.

Again, treat it as a base and take it to where you want to go, savory or sweet.

(It's a great addition to meatballs).
 

I just made baked ziti last week and it would freeze easily if you want to make the casserole, then freeze to eat later. That is a good deal!
 
a friend at work added splenda and cinnamon...it tasted like Rice Pudding....GOOOOOOOOOOOOOOODDDDDDDDDDDD
 
Spaghetti Pie! One of those dishes where the leftovers are even better and it is a super fast weeknight meal.:)
 
I have made calzones stuffed with ricotta, Italian cheese blend and broccoli - yum!
 
Sweeten and smooth ricotta and use it as a filling for cheese danish. Frozen puff pastry if you don't want to make your own, some vanilla and sweetened ricotta (with an egg to bind), and some fruit if you wish - apricot jam, sliced pineapple, whatever. Fold over, bake. Can do a big ring danish or individual or whatever.
 
Saute some chopped garlic in olive oil. Add some frozen spinach that you've thawed, with most of the water squeezed out. After that is cooked through, turn down the heat and add some ricotta. Stir it together until heated through, and combine with noodles. It's very easy, and you can spice it up a little more if you like.
 
Omg. It is heaven! Does your receipe use a box mix and like 6 eggs?

I have one that is eight eggs, ricotta, sugar lemon and orange in a deep dish pie crust. Its a traditional ethnic Easter thing from my father's family (Italian). But I've never seen its like.

But no cake mix. No flour at all except the pie crust, which makes it really nice since my daughter and I both avoid gluten.
