Hi -
We are having an informal dinner party of family and friends and I am looking for EASY menu ideas.
We do not want to grill - so no grill recipes please :)
We will have about 30 people or so at this party.

My best because it can be done ahead of time. Get skinless boneless chicken breasts. Flatten with a mallet. Cut a pocket in each breast and stuff with seasoned butter. Your choice as to seasonings - maybe rosemary and thyme. Place on four sheets of individually buttered phyllo dough. (Melt the butter and brush on each sheet.) Bring up the four corners of the dough and fashion into an attractive knot on the top of each packet. Brush each packet with melted butter and bake until attractive brown and chicken is done. The packets can be prepared ahead of time and simply reheated - but do not nuke. Serve with salad and a rice combo from a box. Brown and wild rice is good. Add desert and you're done. Unique and very good.
 
How about spaghetti and meatballs with a salad and bread?
 
My favorite group recipe is spaghetti pie (easy lasagna), garlic bread and a nice tossed salad. Usually a hit and pretty easy to make.
 

Chicken divan (can be made ahead), a good salad, some fresh steamed veggies, and an easy dessert in a pretty bowl. Serve some good rolls and you are good!
 
Honestly, for 30 people I'd have it catered or serve something do-it-yourself like cold cuts or a baked potato bar. Or maybe you could buy some of those giant party tray lasagnas and cook them up. With salad & garlic bread that would be a full meal. A taco bar might work as well. You could make up a large portion of ground beef and then offer it with shells & trimmings.

It's just not too practical to try to make much of anything for 30 people in a single home kitchen. I don't think I could do 30 chicken breasts in my oven!
 
Roast beef and mashed potatoes, easy, easy, easy

Get enough beef, I use chuck roasts, season and put in the oven at 250° for about 4-6 hours, remove from pan, it falls apart, serve.

Mashed potatoes--make them the day ahead, add 1 brick of cream cheese and 1 16 oz container for every 5 lbs of potatoes when you mash them, add a little extra milk to make them soupy, put in a large baking pan, cover with foil, put in fridge over night. They take about 2 hours to heat up at the 250° or if you have a double oven one hour at 350°.

Mix up a salad, make a vege and off you go. You will spend about 10 minutes of prep time before the meal so you can basically spend the entire evening with your guests!

When having an open house or large party it is also easy to roast a turkey--serve room temp or warm--or bake a ham. For large gatherings we do both. For the ham I would pre-make scalloped potaotes or potaotes O'Brien or au gratin. For the turkey, a few days ahead I make a cranberry sauce, the night before do the mashed pots (as the other poster suggested) I keep sides warm by using a crockpot on the low setting

Baked casseroles are also a good idea, simple & do-ahead; side salads; fresh sliced fruits;an assortment of bakery (or homemade) rolls & breads & for dessert you can purchase the very large cheesecakes, make a sheetcake or do a fix your own ice cream buffet.

Is it possible to ask folks to bring something for a potluck?

How about something like Italian Beef in the crockpot? It makes a lot ( you may need a couple of roasts in a couple of crock pots). I have a yummy recipe. Just let me know if you want it. We do this a lot for larger get togethers. Just buy some hoagie buns and some mozzarella cheese to top them with and you're good to go!

I am going to have to think some more on it...I like the idea of a turkey or ham with easy sides...

I've done the taco bar, and had tortillas, hard shells and chips so people could make two types of tacos or nachos. I use a crock pot for queso, and a second for refried beans. I also buy enough lettuce the someone could make a taco salad if they prefer. The put out salsa, grated cheese (I buy it that way), diced onion, sour cream and guacamole. It also makes good leftovers, as you can layer up the stuff left at the end of the party into layer dip and enjoy it with chips later!

I also have done the honey baked ham with a bunch of deli sides and rolls; we've done wings with ranch, blue cheese and celery; if I've really been short on time and energy I've also just ordered a bunch of different kinds of pizza and some salads.

All of these are easy, and most of them can even be delivered!
 
How about alot of appetizers and desserts...antipasto, spinach dip, vegetable platter, quiche, shrimp cocktail, etc. If you have many it can make a meal...

I love appetizers!!! That is my favorite part of parties...
 
How about drinks...
I was thinking raspberry tea, lemonade, etc....

not sure if you are doing any alcohol...but alot of people love Sangria...I could give you a recipe...


I always go with 2 different types of beer, white and red wines and sodas and juice...then again, I am always stocked with stuff for mixed drinks as well...

Would I be considered a LUSH??? :)
 
I like to provide juices (not purple grape juice, though ;) ) like white grape juice, Juicy Juice in 2 flavors (if kids are about),or apple juice. Milk is good, too.

For the taco bar I would get mango, pineapple, guava. Of course you could do a smoothies buffet (although I think this can be more work & is a potential MESS risk factor :teeth: ) have a friend bring over her blender so you can get 2 going at once.

Iced teas & flavored lemonades are great, there is such a variety! I like to offer local honey, 'natural' sugar, Splenda, Sweet 'n' Low, good ol' white sugar, sliced lemons or other fruits.

It's so thoughtful to make sugar-free drink alternatives available & water, too.
Some folks might want coffee, hot or iced.

Love the sangria idea! It is so colorful & simple to make.
Or a alcohol free punch--adults can add their own favorite enhancer individually ;)
I make an ice ring in a bundt pan, lining up sliced citrus (lemons, limes, oranges--goes with my favorite recipe & will work with sangria, too). I make it out of the punch, so the ring does not water down your punch bowl.
Or go for the all punch ice ring & float some pesticide-free roses or nasturtiums on top. Be sure to check out, some flowers are poisonous! don't want to go knocking off the guests :rolleyes1

In dining, I think you can have the most easy, simple food & if you dress the table with some flowers/greenery, plate the food pleasantly, it will look like you slaved for hours!

Oops, I just saw that you'd like the recipe. Sorry, we just got back from being out of town. I hope it's not too late! Here it is:

3 lb chuck roast (boneless)
1 pkg. Good Seasons dry salad dressing mix
1 pkg. dry onion soup mix
1/2 cup water

Put roast in crock pot and pour in water, onion soup mix & Godd Seasons dressing mix. Cook on low 9 - 10 hours. Shred meat and mix juices.
