This is such a fool proof recipe and always turns out just perfect.
4 Skinned Chicken Breasts
2 Tablespoons Marmalade - this can be either orange or lemon
1 tablespoon sunflower oil
grated rind and juice of a Lemon
Place the chicken breasts in a casserole dish and then mix together all the other ingrediants and pour over the chicken and marinade for at least an hour ( I often do this in the morning and put it in the fridge and cook in the evening). Pre heat oven to 160 degrees and place casserole in the oven for 40 minutes.
This is great served with cous cous, rice or even a medly of vegetables, its low fat and my children love it and it never fails to taste delicious. I hope that your family enjoys it as much as mine.
