Easy Lemon Chicken

This is such a fool proof recipe and always turns out just perfect.

4 Skinned Chicken Breasts
2 Tablespoons Marmalade - this can be either orange or lemon
1 tablespoon sunflower oil
grated rind and juice of a Lemon

Place the chicken breasts in a casserole dish and then mix together all the other ingrediants and pour over the chicken and marinade for at least an hour ( I often do this in the morning and put it in the fridge and cook in the evening). Pre heat oven to 160 degrees and place casserole in the oven for 40 minutes.

This is great served with cous cous, rice or even a medly of vegetables, its low fat and my children love it and it never fails to taste delicious. I hope that your family enjoys it as much as mine.
 
I LOVE lemon chicken. And this looks easy enough that I could even do it.

Uhm, my talents don't lie in cooking; they're more in the area of Disney planning and crafts planning (and sometimes crafts completion). :D
 
This sounds really good, Snookhams! I just love anything with lemon! Do you know what the conversion for the oven temp is? We usually bake our chicken at 325 or 350.

sorry I should have posted the temp conversions, they are as follows

160 degrees C

325 degrees F

Gas mark 3
 
Don't feel bad, Snookhams! I've never seen anyone in the states post a conversion for the UK. ;) It's just not something we think about. :rolleyes:

Welcome to the board & thanks again for sharing! I'm always looking for new things to make. DH doesn't understand, but we've been married 27 years & I was truly tired of making/eating the same stuff all the time. Of course, he could eat turkey or ham leftovers for a week without getting tired of it! :eek: No taste I guess. :jester:
