My husband just discovered that hummus is so good. We are buying it at least once a week at the store. Was looking for a quick and easy recipe to make at home!

so easy to make and it tastes better than store bought.
chicpeas (in can) take out the oil in the can they are in and set aside
olive oil
lemon
salt pepper to taste

grind up chickpeas in food processor
add a little of their oil or use olive oil to make it pasty

blend as smooth or not as you like
add salt pepper to taste

add fresh lemon to taste


Enjoy with fresh vegetables, crackers. AND it's so healthy:woohoo:
 
I make mine with chickpeas, olive oil, lemon, a garlic clove or 2 and a few tablespoons of tahini paste and blend in food processor. If you want to try a different flavor add some chipotle pepper or roasted red pepper to it.
 




I make it a couple times a week in our Magic Bullet. One can of chickpeas, 1/4 cup tahini, a clove of garlic, splash of lemon juice, a little olive oil, and reserved water from chickpeas it it's too thick. A little salt, and a dash of cayene pepper. SO easy.
 
Have you tried it with and without tahini? Can you tell a taste difference?

I've used this recipe for years and everyone loves it. :thumbsup2

Ricks Sun-Dried Tomato Hummus

Ingredients (use vegan versions):

1 (15 ounce) can chickpeas, drained
1/4 cup olive oil
1/4 cup sesame oil
2-4 tablespoons sundried tomatoes, packed in olive oil
3-6 tablespoons roasted garlic
2 tablespoons lemon juice
hot sauce or cayenne pepper, to taste
salt and pepper, to taste

Directions:

1. Mix first 6 ingredients (through lemon juice), and add to a blender. Puree until smooth.

2. Add warm water until you get the consistency you want. Season to taste.

3. Chill in fridge for at least 1 hour.

Serve with Pita triangles.

Preparation time: 10-15 minutes

For a variation in flavor you can add some roasted red peppers.
