Easy frozen meals?

We leave for WDW in 5 days :cool1: , but DH is not coming. He can't handle all that happiness :confused3 . Well, he's not the best in the kitchen, and I can just imagine him making McDonalds or Burger King his second home. Of course he'd blame me for the weight he gained while I was gone.

So, anyways I wanted to make some quick frozen meals for while we are gone. Here is what I have thought of so far:

Spaghetti sauce w/meatballs (all he'd have to do in cook noodles)
frozen taco meat (grab the shells, lettuce, cheese, sourcream)
chilli
I was thinking of grilling a few chicken breasts and freezing them (has anyone done this, how well do they freeze)
Of course I'll grab some single serving frozen veggies that he can just throw in the microwave and prebagged salad.

This is as far as I could get.

Anyone else have any ideas or suggestions I would really appreciate them thanks. :sunny:
 
Stouffers makes some very decent frozen foods. The medium sized ones would be good for two meals. We particularly like the chicken/broccoli bake and the lasagna.

Beef stew is always good. We have a couple of casseroles that we particularly like such as a crunchy potato one and a chicken w/ stuffing. I wouldn't freeze these after making, but they'll keep a few days in the fridge.

Spread the word to your neighbors and maybe they'll invite him over for dinner a few times. Years ago, my next-door-neighbor always made sure my husband had something to eat when I was out of town on business. It was sort of comical, since he's always done all the cooking. She should have worried about ME when he wasn't around!

I've never had trouble freezing/thawing chicken breasts--just defrost in the fridge or gently in the microwave then reheat them however you'd like.

Did you talk to him about what he wants? The only reason I ask is that when DH is on his own he's perfectly happy with cereal and Lean Pockets for the week. :teeth:

Does he like sandwiches? You could get some good deli turkey/ham for him as a treat. You could also make some barbecue (chicken or beef) or some sloppy joe for him to fix up. Those freeze/thaw well too.

Other ideas:

Hot dogs
Beans & franks
Frozen waffles/pancakes for breakfast dinner
Mac and cheese

I cook extra items on the grill (chicken breasts, pork chops, burgers) and freeze them. Then I just warm them in the microwave and they taste great. It is easy to make a baked potato and some cheesy veggies or whatever else you want with it and it only takes a few minutes to make.

I could make a couple of those up for him.

pearlieq thanks for suggesting hotdogs & beans. He loves these.

I think he'll be ok as long as I write it down for him and point out what there is to eat and what he can make.

DH really is a big baby, but he's my big baby :love2: .
 
I did the same thing for my dh when dd and I went and he had to stay home and work, I made a meatloaf, chilli, lasagne from sam's club and a chicken noodle dish from sam's club--he ate out 1 night and had a friend (chef) come and cook one night. the kitchen was all cleaned up-but had a mountain of laundry in the basement waiting for me :rolleyes: enjoy your trip.

Sometimes we eat the Stouffers Skillet Sensations, they are really good. I think I have a couple of those in the freezer.


I sure wish DH knew how to cook something or at least learned ;)

He could probably handle making a baked potato himself in the microwave. It only takes about 10 minutes and is very simple. All he'd have to do is poke holes in it, microwave for approx. 10 minutes (check for softness), and then I read somewhere if you put it in foil after that for about 5 min, it makes it softer/more consistent throughout.
 
You're leaving in 5 days so I wouldn't stress and cook too much.

I can totally relate as I cooked and froze foods for when I had baby except if I let me hubby cook for me (who eats organic and whole foods) he will make me some stewed lentils and brown rice without any seasoning. :crazy2: I'm all for eating healthy, but I want some taste. lol

Cooked food/leftovers should be eaten within 3 days. One really easy way to cook a potato is to poke a couple of holes in it, wrap it in plastic wrap and microwave for 7 or 8 minutes. Do you think he'd do that?

Don't put tin foil in the microwave. It can catch on fire. Not good.

LOL he might use the microwave to do a baked potato as long as tell him how many minutes to nuke it.

I'm probably worrying for nothing. He'll probably do just fine. He probably pretends he helpless around me, so that I'll do everything. :rotfl:
 
are you cooking dinner this week? Could you make extra of what you are having and just freeze the extra? Kind of like a homemade TV dinner.

Good idea! I guess we could have some of the meals I plan to freeze for dinner tomorrow, Sat & Sunday.
 
Don't forget about breakfast for dinner. Scrambled eggs with veggies and cheese in is good, quick and easy. Who cares if it doesn't come out like a nice omelet, just mix it all up and enjoy.
 
Here's an easy easy easy one that has variations...

Cook an entire box or two of noodles or pasta (wide egg noodles, macaroni or any shape pasta he likes). Divide however many servings it makes among large microwaveable plates and/or soup bowls. Then cover the plates with plastic wrap and freeze. (Once they are frozen solid they can easily be stacked.)

Buy several different varieties of canned soups (the thick kind that are almost like a gravy with large chunks of veggies and meat in them). All hubby has to do is pull a frozen pasta plate out, open the soup, pour as much as he wants on the pasta and microwave it for 3 minutes on high. (if he wants he can add a little shredded cheese (any kind he likes...cheddar/mozzarella/colby jack...or my DH's fave pepper jack) on top before he microwaves it.

Voila! Chicken casserole...beef casserole...turkey casserole...depending on what soup he chooses. My husband loves these and they are reasonably complete and healthy (especially if he throws a little dressing on a pre- bagged salad (.79 at Aldi's...don't know if you buy groceries there, but those meal-in-a-can soups are also an inexpensive buy there, and very good).

These same soups are also good served over a baked potato...as is chili (also topped with a little shredded cheese and sour cream if he likes)

Dessert is ice cream...WITH chocolate syrup...because you will be at Disney without him...or Haggendaz bars...because you will be at Disney without him...or Snickers Ice Cream bars...because you will be at Disney without him and he will love that you thought to buy them for him...plus they are EZ and require no preparation other than being placed in the freezer with love.

When you talk to him on the phone after he eats his first serving, be sure to ask if he received the kiss you put on (each) wrapper...lol...I forgot to tell you: if he's around and you have time, kiss each (wrapped) bar and put it back in the box when he can see you do it and tell him why you are doing this so you can laugh when you're talking to him on the phone from DisneyWorld.

I know it's silly, but my "big baby" liked this a few years back...although he'd probably never admit it and would probably turn 5 different shades of red if he knew I was telling you this...lol!
 
Ozymoe, that is too cute. :goodvibes I will have to do that. He is in Atlanta right now and won't be back until Monday, so I want to do everything on Sunday. He'll be surprised, I know he probably thinks he'll have to fend for himself.

ElizaB39, one thing he can cook is eggs, of course he's a health nut so he only eats egg whites :rolleyes:.
