Easter dinner.... and staying on course

What are you planning on having for Easter dinner that will help you stay on your diet plan? I need some good ideas!
 
which plan are you on?

I'm doing Atkins- and I really should put that in my signature!
 
Yes, you should. A WW meal would knock you right out of ketosis, wouldn't it?

I'm having filet mignon, grilled, lobster tails with butter, green salad with olives, avocado, tomatoe and green pepper, cauliflower with cheese sauce.

For dessert, we are having low carb banana nut muffins :)
 

I'm doing ham, a broccoli and cauliflower dish... Not sure what kind of treat, but I'll probably adapt a "family favorite" and use Splenda in it... I'll post more when I figure it out!
 
Here MIL is having turkey, and shrimp scampi (no noodles) broccilliwith cheese sause, and salad with baby spinach.
 
I hope they have something that is seafood at the Grand Buffet that I can eat, if not I'll be eating salad and a little vege.

Mmmmmmmmmmmmmmmmm, Mmmmmmmmmmmmmmmmmmmmm, Mmmmmmmmmm- .....do I sound like Katholyn's homer post!?!?!? This all sounds so delicious! How do you makae a cheese sauce? And , If I use splenda in place of sugar- does anyone know what the proportions are?
 
I think Splenda measures like sugar, karebear. Did you see the limerick that Kelsie composed for you? It's so cute :)

Here is the recipe for cheese sauce:

1/2 cup heavy cream
3/4 cup shredded cheddar cheese
1/4 teaspoon dry mustard

1. In a heavy bottomed sauce pan over the lowest heat, warm the cream to just below a simmer.

2. Whick in the cheese about one tablespoon at a time, only adding the next tablespoonful after the last one has melted. When all the cheese is melted in, whisk in the dry mustard and serve.

Yield: Enough to sauce 1 pound of broccoli or cauliflower or about 4 servings of sauce. Each serving with 1 gram of carbohydrates, no fiber and 6 grams of protein
 
Oh, I think I want to eat at Katholyn's house!!!!! Yummy!! Actually we're having ham, asparagus, brussel sprouts (MY KIDS LOVE THESE), green beans, boiled baby potatoes (none for me), and cauliflower...with the cheese sauce I just got the recipe for. I'm still not sure what we're doing for dessert.
 
I don't even know what we are having since we are going to SIL's house for Easter Dinner...I assume it will be the traditional Ham and all the fixings! :)
 
We are having Ham, Mustard Greens, Corn on the Cob, Red Beans and Rice and rolls. My dh is cooking the girls a chocolate cake. But for the most part he and i can indulge in dinner with no guilt! Oh i love this so much.

My entire Family will be over for Brunch this year instead of dinner.

The main theme is 'Breakfast Burritos'.

Scrambled Eggs/cheese

biscuits/gravy
green chili
shredded cheese
tortillas
fruit
pastries

And Birthday cake for my Mom :)

I have low-carb tortilla's so I plan on a breakfast burrito of eggs, bacon, sausage, cheese and for some of my carbs for the day, I'm having 1/2 cup green chili to pour over it. :)

I've planned 1/2 cup of strawberries w/whipped cream for my treat.

Kelsie, I think your breakfast burritos sound yummy!! Doncha just love those low carb tortillas?

Well I finally settled on Easter dinner!!!!

A spiral sliced ham- very low point probably 1 pt per ounce
steamed carrots- 1 pt.
Homemade scalloped potatoes- 5 pts.
Fruit salad- 2 pt.
and CHEESECAKE with cherry topping 9 pts.

I have used maybe 3 pts. so far today and that is jsut munching while cooking on sliced potatoes and a bite of ham so I am saving it all for dinner. It is in the oven and dishes are done!!

We had dinner on Friday with the extended family, and I did well, even with the wine and tart. Today, it was just the 7 of us and, yes, all teens were present! We ate early because DD17 had to go to work. So: ham, scalloped potatoes, carrots, asparagus, salad, bun, chocolate cheesecake (I didn't eat the cookie crust, does that save points?) and chocolate milk. I had already fit it in at Fitday, including the wine that I will have later tonight!

Jiminy, that meal sounds wonderful!! The Cheesecake sounds scrumptious!! I hope you had a nice big piece for me!! LOL! :):)
 
Can you believe we never even cut the cheesecake!!! The one day I had plenty of points to use for it and neither one of us wanted any!!! Oh Well tomorrow is weigh in so we can hope for the best!!
