Easter Brunch menu???

we usually do an easter breakfast/easter dinner, but this year have decided to just do brunch instead. am planning my menu now and am wondering what others have on theirs.

also, am thinking of a baked french toast or something similar, but have never made one. any good recipes?
 
I love Krispy Kreme Bead Pudding




Ingredients
2 dozen Krispy Kreme donuts
1 (14-ounce) can sweetened condensed milk (not evaporated)
2 (4.5-ounce) cans fruit cocktail (undrained)
2 eggs, beaten
1 (9-ounce) box raisins
1 pinch salt
1 or 2 teaspoons ground cinnamon
Butter Rum Sauce, recipe follows
Directions
Preheat oven to 350 degrees F.

Cube donuts into a large bowl. Pour other ingredients on top of donuts and let soak for a few minutes. Mix all ingredients together until donuts have soaked up the liquid as much as possible.

Bake for about 1 hour until center has jelled. Top with Butter Rum Sauce.


Butter Rum Sauce:

1 stick butter

1 pound box confectioners' sugar

Rum, to taste

Melt butter and slowly stir in confectioners' sugar. Add rum and heat until bubbly. Pour over each serving of Krispy Kreme Bread Pudding.

I usually pair this with some type of savory breakfast casserole. It is always a hit at my house!

And this is my 'staple' baked french toast. I generally leave out the cranberries as my dh doesn't like them. And I often sub maple swirl bread that I get at my local grocery (store brand) and that's awesome as well.

My brunch menu is generally:

Baked French Toast
Hash Brown Casserole
Baked Egg/Sausage Casserole
(I like doing all of these as I can make them the night before, less hassle for my in the morning.)

I do fruit of some kind or a fruit salad, and a tossed or caesar salad, plus a veggie like roasted asparagus. Bagels and cream cheese or muffins.
 
thanks! no krispy Kreme around me, but I find that facinating...it must be soooo rich and decadent.

that creme brulee one looks amazing!!!!

so far I have:

honeybaked ham
shrimp
eggs
asparagus
carrots
blueberry muffins
rolls/biscuits
creme brulee french toast
fresh strawberries
fresh pineapple
cheeses


I think thats enough. hadn't thought of a potato, maybe I will try to figure one out. hmmmm...

and dh wants a dessert, if only for later in the day. which I find funny because there is so much candy around at easter time. but maybe a lemon cake?
 

We love this egg casserole (minus the mushrooms) and you can make it the night before:

6-8 Servings Prep: 20 min. + chilling Bake: 25 min.
Ingredients
1/2 cup butter, divided
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/8 teaspoon pepper
2 cups milk
1 cup (4 ounces) shredded process American cheese
1 cup cubed fully cooked ham
1/4 cup sliced green onions
12 eggs, beaten
1 jar (4 ounces) sliced mushrooms, drained
1-1/2 cups soft bread crumbs
Additional sliced green onions, optional
Directions
In a large saucepan, melt 2 tablespoons butter. Whisk in the flour, salt and pepper until smooth. Gradually stir in milk. Bring to a boil. Cook and stir for 2 minutes or until thickened and bubbly. Remove from the heat. Stir in cheese; set aside.
In a large skillet, saute ham and onions in 3 tablespoons butter until onions are tender. Add eggs; cook and stir until eggs are almost set. Stir in mushrooms and cheese sauce. Transfer to a greased 11-in. x 7-in. baking dish. Melt remaining butter; toss with bread crumbs. Sprinkle over top. Cover and refrigerate for 2-3 hours or overnight.
Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 25-30 minutes or until top is golden brown. Sprinkle with additional green onions if desired. Yield: 6-8 servings.
