Easter brunch/dinner

We are going to our best friends- but the typical menu includes ham, "better than sex" potato casserole, pineapple bread filling, broccoli casserole, and then whatever else we come up with. Not sure on dessert. I know we have a frozen coconut cream pie in the mix- but not sure what else will be there.
 
I make reservations. We always go out to a fancy brunch after church, then don't really eat much the rest of the day - whatever's in the house.
 
What are you serving? What do you make for dessert?

Needing some inspiration :)

Ham, potato casserole, pickled eggs, garlic green beans, spinach salad(strawberries, blue cheese and hardboiled eggs), pineapple upside down cake, banana pudding, coffee.
 
Easter brunch? Well, I learned something today! When I was growing up, eating on Easter consisted of egg salad from the hard boiled eggs. We've never really done anything different on Easter, food-wise. Maybe we ought to take advantage of a new tradition, huh?
 

Reservations!

This minister wants to do nothing but eat something delicious that I don't have to cook or clean and get home to take a nap :) Holy Week is an exhausting week.
 
We are having grilled chicken and red potato salad. For dessert, we will make S'mores, using various colored Peeps! We have a little S'mores cooker for the table, and those Peeps are delicious, surrounded with melted chocolate and graham crackers! It's fun skewering the little buggers! :rotfl:

Ham with Hawaiian rolls for making sandwiches
potato salad (mine)
macoroni salad (my mama's..she's bringing it)
3 bean salad
key lime pie (my DH's specialty)
cupcakes...half will have chocolate frosting with a bunny peep propped on top; the other half will have buttercream frosting, green tinted coconut and jellybeans to mimic dyed eggs hidden in grass.

It's warm here already so we wanted something picnic-y.
 
We're doing tea for the third year

2 kinds of scones
chocolate covered strawberries
mini cinnamon rolls
mini brownies
turkey rolls
roast beef sandwiches
cucumber sandwiches
chicken salad sandwiches
deviled eggs

and 4 or 5 kinds of tea


later for dinner when it is just us again, probably grilling something, not sure what yet
 
Heading to SIL's for Easter dinner. I believe she's doing the typical ham dinner. I know I'm bringing deviled eggs and pineapple upside down cake and probably something chocolate for those who don't eat pineapple.
