Easier resort for transportation

Beach Club is my all time favorite resort, but I wouldn’t stay there if SAB wasn’t open. I completely understand your hesitation with it not opening on time. My family was at Disney in October and stayed at the Boardwalk in two studios because we were unable to get two studios at the Beach Club. I really don’t mind the pool, but it is no SAB. Being able to walk to both Epcot and Hollywood studios is very convenient. We took a bus to both MK and Animal Kingdom.
 
Are you open to using Uber/Lyft sometimes? That's what we do. I hate waiting for buses. Otherwise..

YC/BC/BW for walking to EP and DHS.
BLT/CR for walking to MK and monorail to EP. Lots of dining options on the monorail too!
OKW for using rideshare - so nice to be dropped/picked up right at your room.
 
Definitely any of the Boardwalk area resorts. Yacht and Beach are great but I would only book if the pool was to be open by your vacation. I love the Swan and Dolphin (the swan a bit more) because they have multiple pools, lots of food options, and are still super close to Epcot and the Disney Studios. Hoping on the boat is super simple.
 
What happens if you get to the back of Epcot and the Skyliner is closed? Do you have to walk all the way back through the park to get to the bus stop at the front?
You could walk to the bus stop or boat launch at the Beach Club, depending on the destination.
