We were on the Eastern cruise the same week last year and the weather was perfect.
80's in St. Maartin and St. Thomas, and Mid to Upper 70's at Castaway Cay. Orlando was in the 70's (we were there for 3 days prior to the cruise and didn't fly back until night at the end). The week before we went down was in the 80's, but the week after we got back was down to the 60's for highs.
Swimming was fine at all locations. CC, however, took a while to get used to the water temp, but it was swimmable. I just found that we couldn't run right in like in St. Thomas or St. Maartin.
By the first full day on the boat, the weather was beautiful. The sun was out and the temps were more than warm enough to be at the pools in you swim suit. Then again, if we get mid-50's here in WI in March, I put on shorts. The body is so used to the freezing cold temps by then that 30's feel like a heat wave.
