Does Disney only add one day at a time?? I do my dining reservations Monday, and the calendar isn't up to date for November so not sure how I'll know what park I'll be able to make plans?

Yes, Disney adds to their park calendar on a rolling 180 day basis.

There are sites such as Touring Plans, Kenny the Pirate, and similar that post calendars in advance of Disney that can be helpful as a guide.

Also looking at last year’s park calendar for your dates in question can provide a frame of reference as well (with a caveat that past performance doesn’t always = future results when the park calendar is concerned).

Note that Disney’s park hours that far out are relatively ‘bare bones’ and subject to change down the road.

Lol, that’s a whole other thread topic. Hours-wise, I use Touring Plans. Crowd-wise, I’ll leave that to the variety of opinions you’ll get from other DISers. :-)
 

Since the Disney site won’t be up till I make reservations, I’m curious how others choose which park to go to which day? I’ve been going to Disney for decades and this is the first time the WDW calendar won’t be published when I make my ADRs. Makes everything a guess!

I don't make a lot of ADRs.

I put AK and HS at the end of the trip to make FPs easier.

We go to MK first, always.
 
We always go to MK first, no matter what crowd calendars say. For this coming year especially (thanks SWGE) I don't think any crowd calendar you find will be anywhere close to accurate. The park hours also for November will be interesting to see since Disney decided to sprinkle some pixie dust for EEMH. Since that ends the beginning of November (for now), I'm curious to see if they extend that further into Nov-Dec. I'm hoping so since our trip is 11/9-11/17.
I just had to make our ADR's on Monday, and this is how I decided to which park/day: First day always MK, then after that I generally know that we only spend 1 day at AK, HS and Epcot and we always end our trip with several days in MK, so I laid out our week according to that.

I’m a “avoid the park with EMH” person, generally speaking. So I use the typical EMH pattern, note any special things like MNSSHP, MVMCP, Epcot Festivals, etc, add in rest or water park days where they would make sense in the flow of the trip, combine that with what I want/when I want, and that generally puts me on a path towards something that works for us.
 
We rarely make ADRs anymore. The days before Thanksgiving we were there we got a day-of Spice Road Table ADR and a day-of Mama Melrose ADR. (my kids are adults so don't care about the popular character meals, etc)
 
I base my plans on:
-Epcot on arrival day
-MK on first full day and last day
-AK a couple of days into the trip, possible AM EMH
-HS day 4 or later for SDD FP
-Half of a rest day somewhere
-Fill in the rest

We also park hop so I take that into consideration as well.
