Early departing flight need transportation help

Hello, I'm looking for suggestions, the day we leave WDW our flight leaves Orlando at 7:50 am.

airline check in at the resort won't be an option will it?

If we take a car service (will actually need a van I think because we will need a carseat) how much time does that save us compared to taking DME?

I'm bummed because we will have to check our luggage at the airport. I've been spoiled by resort airline check in!

You are correct that you can't use RAC that early as DME will pick you up at approximately 4:50 AM (3 hours before flight time) assuming you have a domestic flight.

Since you have to check you luggage at the airport you really should arrive at least two hours before flight time 5:50 AM. MCO can be quite busy especially early in the morning.

In my opinion taking a cab isn't going to save you much time and probably isn't worth the cost.
