Early arrival & best use of TS credits

We will be driving down overnight from Alabama, arriving midmorning on Saturday. We plan to go directly to POP and hope a room is ready.....but if not, we will still be able to access our park tickets & DDP meal credits immediately via our Magic Bands?

Also, If we stay (7) nights than am I understanding correctly we get 7 TS credits each (along with QS & snacks)?

If so, does my plan below sound like a good use of our credits for myself, husband and 5yr old son? Thanks!!

Sat: T-Rex for dinner (1)

Sun: Chef Mickeys for breakfast (1)

Mon - *Have to choose a TS in Epcot - late morning start, so probably a lunch TS*

Tues - Tusker House for breakfast (1)

Weds - No TS

Thurs: Mama Melrose for lunch w/ Fantasmic (1)

Fri: Mickeys Backyard BBQ for dinner (2)

Chef Mickey is NOT a 2 TS credit restaurant; it's only 1 TS credit, so you need another one somewhere.
 
Yes, you can check in at POP to activate your dining plan and park tickets even if the room is not ready yet. Good news-as PP stated, Chef Mickey is only 1 credit, so you have room to add another meal Mon or Wed, or to change one of your existing to a different 2-credit meal reservation if you like.

I'm just guessing, based on your meal locations, that you'll be in MK on Sun, AK on Tues and DHS on Thurs? I can't tell if you plan to go to Epcot - if that's where you're headed on either Mon or Wed, you have lots of great options for a table service to choose from there!
 

We are planning Epcot for Monday, so since Chef Mickeys is only 1 credit, we will get to pick a table service there! Great news!! =)

If you want another character meal in Epcot, I really like Garden a Grill, which has Goofy, Pluto, Chip and Dale (and Mickey? Geez, I can't remember!) in farmer outfits. Food is tasty and served all-you-care-to-eat family style in a restaurant that slowly rotates with views of the Land ride below.

Non-character gives tons of choices! Two that have atmosphere that would be particularly appealing for a 5-y.o. are Coral Reef in the Seas Pavillion (huge wall with the tank from the seas showing - you'll see the marine life and divers swimming around) or Teppan Edo in Japan (hibachi style where the chef cooks at your table)
