Duck recipes?

Okay, I'm not sure if this is the right place to post this, so forgive me if it's not. I've been lurking here a long time but have just recently mustered the courage to post. (Trust me, I'm not shy at all in real life, so I'm not sure what my problem was. At any rate, I'm over it now. Okay, I'll shut up. Sorry.)

DH wants me to roast a whole duck tomorrow. AACK! :scared1: Does anyone have any tips or recipes? I looked on food network but when I saw confit I nearly had a heart attack. (I'll tell you that story later - but it's NOT pretty.)

Any suggestions would be very much appreciated.

Smoke it or roast it like you would a chicken....mmmm........ :thumbsup2


I dont know why some people have problems with others eating duck but not chicken...hmmm....we raise both ;)
 

Any ideas for how long per pound and what temp? By the way, I'm making red beans and rice, too....just in case it turns out horribly wrong!

I don't know any duck recipes but I LOVED, LOVED, LOVED the duck firecracker at AKL this past July. I would KILL for the recipe.
 
Sorry I'm no help with the roast duck issue, but I have a fantastic duck gumbo recipe! :)

LOL! I thought I was being dissed! I haven't had the duck firecracker. What is it? Sounds delish!

Bring it on! I've been hankering (did I just say that?) for gumbo for at least 3 weeks now.
 
My brother went duck hunting once and since my husband is a big duck fan, my brother gave him a couple of the ducks. They were cleaned, defeathered, etc. whatever you do to clean up a duck. My husband loved Duck L'Orange, so I thought I'd try that. It said to stuff the wild duck with cut up apples and onions before roasting, so I did that. Then you throw away the apples and onions (they are supposed to take out the gamey taste) after roasting. So I did that. Then I made the orange sauce and put it on the duck. Then my husband started eating it and he made such a face. I don't like duck and would not eat it ever, even in a fine restaurant. The ducks turned out terrible and my dear husband ate a bit then threw the rest away with the apples and onions.


Tell hubby to roast his own duck. You'll take the kids to McDonalds.
 
Geez... that's how I feel about duck, but I'm committed now. I'll let you know how it turns out. (by the way...not looking forward.)
 
There is a difference between wild and "farm raised" duck. I will not eat wild duck...YUCK but love "farm raised" ducks such as pekins.
Let us know how your duck turns out...it will taste different its not like chicken like some people think. Avoid eating the skin if you roast it though, I always hated the skin for some reason

It is some kind of duck spring roll served with a wonderful sauce. I asked for the recipe at Jiko, but it is one of the chef's secret recipes that she doesn't share.
 
Just so you know, the duck was GREAT. I used Sara Moulton's Best Roast Duck recipe from Food Network. Skin was crispy and the meat was moist. If you are leary about trying duck, this is the recipe for you. I must admit, though, I cursed her a few times while cooking!
 
I'm glad you didn't have the same results as me.
 
Glad it turned out good :thumbsup2 I will have to check that recipe out. We have 7 ducks that hubby doesnt want anymore :rotfl2:
