Duck at Chefs de France

I was wondering if anyone could comment on the duck at Chefs de France. I love duck, but only when it is prepared well. I'm especially concerned with how fatty it is. :)

Trip is getting close enough that I'm starting to look forward to the meals!!!
 
I had it on our trip in August and thought it was delicious! I didn't find it to be too fatty at all.

I wouldn't have even asked, but I just had some duck that was really, really fatty and it made me concerned. :)
 
I love duck but I think Chefs was the worst I've ever had. It was overcooked.
 

My husband just had it last week and found it fantastic like always. He loves thier duck.
 
I've been thinking about ordering this on my upcoming trip. To show my ignorance: Do they ask you how you want it cooked? It seems like I went to an upscale restaurant a few years ago where they recommended I have it medium but I thought to myself that duck, like chicken, should probably be cooked pretty thoroughly?! :eek: And had them cook it a bit more. But, perhaps that "ruined" it? It tasted pretty good to me but would like to have it prepared the way it is meant to be prepared... Would appreciate advice from those more versed in duck preparation and consumption.

I also thought about ordering the beef filet there but the pictures look very inconsistent - some of those cuts do not look like tenderloin. :scared1:
 
DH had it last trip and really enjoyed it. His is picky about his duck as well so i think you would be safe. I don't eat it.
 
I have had the duck twice at the Chefs de France and i absolutely LOVE it! You won't go wrong! It is delicious!

Just got back this week- DH had the duck at chefs, thought it was good- though not the best duck dish he had all week. Wasn't especially fatty, just not as flavorful as he would have hoped.
 
Doc Goofy--duck breast has a lot of fat just under the skin, if you are getting duck breast only, and the server recommends medium--I would get it medium. If you are getting a duck leg portion, it takes longer to cook and the issue of the amount of doneness likely won't arise.
This used to bother me a lot until I noticed that even Julia Child lamented that you could not cook a whole duck successfully because the breast cooks faster than the legs, and recommended cooking duck in pieces instead of whole.
 
Unfortunately when I had it in October 2008, it was cold and chewy. Not at all appetizing.

However, others seem to have high opinions of this dish, so I may have just had a bad night. I wouldn't hesitate to try once more!
 
Duck should be cooked the way you want it done. Some people like it a bit under cooked. But its also a temperature thing. I can't speak for chefs du france but I believe if you specified how you wanted it cooked you should be able to get it that way.

I eat my steak rare but thats how I like it you should order your steak how you'll enjoy eating it.
