I was wondering if anyone could comment on the duck at Chefs de France. I love duck, but only when it is prepared well. I'm especially concerned with how fatty it is.

And had them cook it a bit more. But, perhaps that "ruined" it? It tasted pretty good to me but would like to have it prepared the way it is meant to be prepared... Would appreciate advice from those more versed in duck preparation and consumption.
