Droid Depot - Why so much availability?

Im trying to decide which day of my mid-march trip I schedule my 7 year old to build a droid but not sure what I want to do.
Im looking at a both days he could do it and its WIDE open. Like every time available. So the question is - will these fill up closer to our trip? Or is it just not that popular anymore and we could really just walk up whenever we want?

I thought it was going to be hard to get like BBB was for my daughter but NOPE!
