I hate when people ask thsee questions, but I’m gonna do it..
how strict are they about the only 1 other person with you? I wanted to build one as a family, but there is 4 of us. So do we just need to build two if we all want to go in?
I can't speak to how strict they currently are but the build area is somewhat "open" to the rest of the store. There is a half height fence separating the two areas but its easy to show things to and talk to people on the other side of the fence. The conveyor belt where you select parts is on the far side from this wall but you can still see some of it depending on how many people are in the build area and your builder could certainly bring parts over to show non-builders. The actual build/assembly stations vary but some are fairly close to the fence too.

Just watched a bit of this process on YouTube today because I was curious in case my daughter decided to do it
From the looks of it, it looks like others can be in there like in the store section…
Unlike Savi’s which I watched today too where it would be real strict since it’s a small area and no store section that I could see.

We are a family of 7. My husband and son built the droid while I kept an eye on everyone else. We were fine to be in the store and I grabbed several pictures of them building. You might want to build 2 if you want to allow different kids to pick different parts, and there are different models.
