Driving from South-central Texas

We are planning a drive from Corpus Christi which according to travelmath is 1180 miles one way, or 18 hours 14 minutes. Can anyone confirm the accuracy of this timing? And I'm sure we will have to stop for a hotel along the route in FL somewhere. We'll be on I-10 all the way from Texas to I-75 South. Where is a good stopping point? I only want to have 5-6 hours of driving the second day. Good rest areas? Best food or unique food along the route? Any special places to see along the way? We will have to stretch our legs and if there is a scenic turnout or spot or great little hole in the wall restaurant, please share. Anything from Sugarland/Houston onward as we'll probably stop for breakfast around Sugarland. Prefer a great cup of coffee too, and McD's is so not it. Thanks!
