My dh's one and only request for this trip was to go back to Kimono's for sushi- well, the only way we can seem to fit it in is on our Epcot day. My plan is to spend the day at the park and then walk over to the Swan around 5:30 when they open. Will we be totally out of place in our shorts and t-shirts?

You would be out of place at Victoria & Alberts in shorts and t-shirts. Anywhere else you will fit right in.

If all you're worried about is that you look like everyone else dining there, sometimes if there is a convention, the place will be full of conventioners who are pretty dressed up. But you will not be turned away from the restaurant in shorts and tee shirts.

Thank you!
We ate there last October and I didn't pay attention to what anyone else was wearing. I just didn't want to get dh excited about going and then not be able to eat dinner :)

If you are concerned, a polo-type collared t-shirt for him and capris for you are always more dressy. We stayed at the Dolphin 12 days last year and never found to be out of place, even in jeans/shorts and t-shirts.

I would be more concerned for being cold with the air conditioning in some of the restaurants. But as far as dress codes, you are fine...really most restaurants you will come across on Orlando don't have much requirements. It's more casual. You might see something about no bathing suits possibly. :-)
