If you want to have a special spot for the show they also do a special menus is some good restaurants with tickets for reserved areas in the park so you don't have to be there too much in advance !

Dreams lasts about 20-25 minutes but everyone is gathered in front of the castle for that.
For dining if you really want character dining, you do have Inventions which is in Disneyland Hotel right at the entrance of the park. On weekends you also can eat in the Auberge de Cendrillon with the princesses.

I don't think the princess meal is just on at weekends is it? Hoping not anyway as we are there sun - thurs and when I booked it was giving me the option to book a meal there on different days with different time slots x

No, the Princess Meal is on everyday
