How late are the shops at Downtown Disney typically open on Friday and Saturday nights? Thanks!

I believe the big shops are open until midnight right now, maybe even later. I now several very late evenings I was walking back to the hotel and was surprised to see them still open.

They tell you on the tram on the way in, but I always remember it being an hour after the parks close.

I believe the Disney store there is open until 1am if the park closes at midnight. Some of the smaller eateries and other merch stores close earlier, but I'm pretty certain the "bars" (ESPN, House of Blues) stay open until 1 or 2am.
