We just got back and I only had 2 reservations set for the entire trip. We ended up deciding about 1 am on Thursday morning that we would like to have dinner somewhere. When I looked on MDE we had the option of several popular ones at normal dinner time (5:00 to 7:30) could have picked Chef Mickey's, 1900, Ohana, there were about 20 to choose from both inside the parks and at the resorts.
 
I have looked at this before a couple of different times. It always seemed that there were 30-40 dinner options available. Some may have been in a park requiring a hopper or at an odd dining time or completely across property. There is usually something available.
 
I agree. I think there is always something available. Sometimes it requires some compromise on time and venue but you will not starve at WDW. That being said, you will probably not be able to get the most popular places at the most popular times without planning well ahead of time. But that is true in a lot of places. Not just WDW.
 
It never is good to stress over Disney. Things always work out. And if not there's always the food court and cheesecake.
 

I think your last minute dining options have opened up with the new cancellation policy. Since they now charge for no-shows, I've booked day before and day of ADR at fairly popular restaurants.
