I am hosting a pasta supper for DD's cross country H.S. team this week. I'm half feeling good about the progress, and then half panicking (Hope it is spelled correctly ;)). While a pan or two of brownines is a no-brainer for me -I was thinking that a non-chocolate dessert would be good too. Although - I'll be in the brownie line myself:thumbsup2

So - would this dessert be OK? SOunds easy enough to make. I definitely do not want to do cookies, I just want to make 1 thing and be done.

Orange Creamsicle Bars

Crust:
2 cups flour
1/2 cup confectioners' sugar
1 cup (2 sticks) butter, softened
1 tablespoon orange zest, grated

Filling:
4 eggs
1 cup granulated sugar
1/4 cup flour
1 teaspoon baking powder
1/2 cup orange juice
1/2 cup sour cream
Confectioners' sugar for dusting

Heat oven to 350 degrees F.

Make the crust: In a large bowl, with an electric mixer, blend together the flour, confectioners' sugar, butter and orange zest until crumbly. Mix lightly with floured hands, press the mixture evenly into the bottom of a greased 9 x 13-inch pan. Bake 20-25 minutes until lightly browned.

Meanwhile make the topping: In a large bowl, lightly beat the eggs. Mix in the granulated sugar, flour, baking powder, orange juice and sour cream. Set aside until crust is done.

Remove crust from oven. Quickly remix the orange topping and pour it over the warm crust. Return to oven and bake 25-30 minutes until topping is a light golden brown. Let cool. Just before serving, sprinkle with confectioners' sugar through a strainer.

Cut into 36 bars.

The size of this group is 50 girls. I'm not worried about any leftovers, as if there are some, DD can bring them to the meet the next day.

I think it sounds really good! I was going to suggest lemon squares, but these sound yummy too.

Interestingly enough, I LOVE, LOVE, LOVE lemon squares, I just do not know how many high schoolers would feel the same - hence my search

My DD11 LOVES lemon squares, and has brought them to many school functions. They are always snapped up by the kids.

Your creamsicle bars sound good too, though!

I'll admit, I am curious. Let us know how they come out and if the kids like them :thumbsup2

WHAT? There is another kind of dessert other than chocolate? Well, I never...;)

Actually, my boys -- all middle schoolers--love lemon squares, too.:thumbsup2

:lmao::lmao::lmao:

I was going to say the exact same thing when she said a non-chocolate idea. My kids LOVE lemon bars.

I know my hubby would love them and I think I would too. I personally don't care for anything lemon. Except pound cake.

SO - this is more of a non-update. One of the other Cross Country moms offered to bring dessert for tonight. So, I'll have to try these at a different time.

As always - I appreciate your comments!
