I could get a type of tray to attach to my kids' car seats for our trip to FL. We are driving and I"m making backpacks with stuff to keep them entertained. The only issue is, they can't color if they don't have a table top to do so on.

Try it out before you leave to make sure it fits. I know with some car seats this doesn't stay level.

We use this. It is soft, but still hard enough to color on. It is dangerous to have a hard/stiff tray if you get into an accident.

All 3 boys use this one and have for years - it is awesome! No worries about anyone getting hurt by it in an accident and it's very easy to unclip one side and lay it next to the carseat when not in use but still keep it close. The raised edge keeps things from rolling off (crayons, toy cars, french fries... ) and the surface is firm enough to draw on.

I'm a CPST, and I agree. The hard plastic ones are not the best choice. I recommend the one from One Step Ahead posted above.

Not to hijack the post, but can the pockets on the sides be removed on the softer tray? My girls car seats are right next to each other - actually touching. I think this is a great idea, but anything that has something that hangs over the side wouldn't work for us.

Sure - it's just a fabric and mesh pocket. You could either tuck it under the tray (for future use when they move to boosters or if you want to sell it/pass it along someday) or just take a pair of scissors and cut it off.
