Does anyone have a Sweet potato souffle recipe?

Hi! Thanks in advance to anyone who can help me w this!

I had a recipe that now I can't find; It was called Sweet patato souffle.
It was made w some kind of canned milk~evaporated or sweetened condensed?

I had a topping of pecans w sugar; butter; flour and I put marshmallows on the top~I'm not sure if they were included in the recipe or not~but I love them !!

Thanks for any help you can give me :)
 
This is one a friend of mine made

Ingredients
* 3 large sweet potatoes cooked and whipped
* 1 cup sugar
* 2 eggs beaten
* 1/2 teaspoon salt
* 1 stick butter
* 1/2 cup evaporated milk
* 2 teaspoons vanilla
* 1 bag marshmallows
* 1/2 cup chopped pecans

Directions

Peel and cook potatoes until tender. Drain potatoes and whip. Add sugar, eggs, salt, butter, milk and vanilla. Mix well and put in a greased 1 1/2 quart casserole. Bake in a preheated 325 degree oven for 25 minutes. Place marshmallows and pecans on top and return to oven for about 5 minutes or until brown on top.
 
No marshmallows but this recipe is to Die for (and I don't even LIKE sweet potatoes). It's from Ruth's Cris Steakhouse:

Amount Measure Ingredient -- Preparation Method

CRUST
1 cup brown sugar
1/3 cup flour
1 cup chopped nuts (pecans preferred)
1/3 stick butter -- melted
SWEET POTATO MIXTURE
3 cups mashed sweet potatoes
1 cup sugar
1/2 teaspoon salt
1 teaspoon vanilla
2 eggs -- well beaten
1 stick butter -- ( 1/2 cup) melted
Combine brown sugar, flour, nuts and butter in mixing bowl. Set aside.
Preheat oven to 350 degrees. Combine sweet potatoes, sugar, salt, vanilla, eggs and butter in a mixing bowl in the order listed. Mix thoroughly. Pour mixture into buttered baking dish. Sprinkle the surface of the sweet potato mixture evenly with the crust mixture. Bake for 30 minutes. Allow to set at least 30 minutes before serving.

I think this is the same recipe that I found on Food Network. I've never made it before, but wanted to try something new. I love sweet potatoes. I have two health nuts (my brothers) coming over that will disapprove of the marshmallow topping :snooty:. Oh well! :laughing: I'm looking forward to trying this recipe!:thumbsup2

But, I have to say it was sooooo amazing! Everyone loved it! And I have people in the family who are very healty~ marathon runners and triatheletes; even they loved it! :laughing:
 
Emeril has a great one in his childrens cookbook "Theres a Chef in my Soup."
