In trying to stay away from wheat I decided to give quinoa a try. I cooked it for lunch with some frozen vegetables, and added a vegetable flavor boost packet. It's pretty good. :)

So, if you use quinoa how do you prefer to cook it and what, if any, add-ins do you use?

I made it often but I prefer the red quinoa. I cook it per the instructions but use broth instead of water and like to add diced vegetables. My favorite is red quinoa with diced tomatoes and cucumbers and I add basil.

My dd got a recipe, which goes something like this...cook quinoa, let cool.

Add olive oil, green onions, black olives, cumin, red pepper flakes, black beans, cherry tomatoes cut in half, salt. I think that is it. Chill.

The beauty of it is that everything is "to taste" and you can add, subtract, or make up your own recipe.

I buy it occasionally and cook it in a variety of ways. But honestly, I don't really like it.

Quinoa and farro are my favorite sides.

Quinoa I usually toss in some chopped broccoli, a little pesto, and chopped tomato if I have it. Or spinach, garlic, and lemon.

Farro I do mostly the same thing. It really takes on any flavor you add.

YUM!

yes.....One of DD16 favorite recipes is cooked quinoa with a bit of olive oil, shredded cheddar and steamed broccoli mixed in.

I cook it according to the package, and add some shredded Mexican cheese, avocado and salsa.

I have also made it for breakfast, but I use almond milk instead of water, and add chopped nuts, brown sugar and cinnamon.

I love quinoa. I will add it to soups after rinsing it. I let it simmer in teh broth and use it in place of pasta or rice.

I cook it (prefer the nuttier red) add sesame oil, a bit of soy sauce, ginger, garlic and any veggies and or meat or seafood I like.

I could et this every day.

MIGrandma, I'm glad you started this thread. I am going to cut down on wheat and see where that leads me. The family has been sick with one thing or another for a month now. I'm just tired. So it's baby steps.

I'm interested in the Quinoa. The recipes look good. Thanks!

Quinoa is one of those foods that I really want to like, but I just can't. I have tried several recipes without luck.

Best recipe we make with quinoa (I WANT IT RIGHT NOW), can't find it at the moment, exact measurements not too important.

Cut a few acorn squash in half and roast in oven. Cook quinoa, in another pan cook shallots and turkey sausage. Mix together, add sage, salt, pepper, dried cranberries and goat cheese (or feta). Mix into super quinoa goodness, stuff into squash. SOOOO AMAZING!!!!!

We use it in place of cous cous.

Also over the summer cold with diced cucumbers, tomatoes, mint, lemon and some olive oil.

I've made quite a few recipes with quinoa. I like it a lot. I will try to post them (but not tonight- I've had it for today!). I have a couple of salads, and a hot recipe that has swiss chard in it. I've also made it as a breakfast cereal, with milk, brown sugar, walnuts, and raisins.

Quinoa is great! My favorite is to cook it in coconut milk, with some cinnamon, ginger, and a little lemongrass, and toss with some roasted butternut squash. And now I know what I'm having for dinner tomorrow!

had it for dinner tonight. I made the quinoa, in a skillet I cooked up some baby shrimp, some chopped broccoli, and garlic. Threw it in the quinoa and added fresh lemon juice, lotsa dill, and some pepper. It was really good!

I do love it for bfast too. Warm it up and add almond milk and honey. So good! I have been known to add coffee creamer (the international delight flavored kind) when I am out of almond milk!

Tried it a few times, but didn't care for it.

Not sure how true the following is, but about a year ago there was an article in one of the papers. Since quinoa has slowly gained popularity in the US over the past decade, a larger percentage of what is grown in South America is now being exported, leading to higher prices for impoverished locals in Peru and Bolivia.
