I have planned out the dinner ones, but if we change our mind, can we go to any sit downs for lunch or breakfast without ADR's? What a pain! Who know where you will be when!!! Dinner were hard enough...

It depends --- when are you going? how many in your party? Which park (epcot will offer more sitdown choices)

If it's just 2 or 4 people, go for a late breakfast/early lunch, assuming it's not a peak travel time.

We always plan our big meals at lunch so all of our ADr's are at lunchtime except Chef Mickeys. Neither myself or husband eat breakfast, we usually have coffee to get us started so by the time lunch time rolls around we are pretty hungry. The rest of the meals we will just do CS. I find it to hard to plan dinner time ADR's simply because there are so many night time activities we want to enjoy and do not want to waste the time eating at TS.

If you plan on doing any Character breakfasts or lunches, then yes, you do need ADRs. For the really popular restaurants (Sci Fi, 50's PT, Rainforest Cafe, Le Cellier, etc), I'd play it safe and do ADRs as well. The resort restaurants that aren't Character meals, I would feel not so worried about.

If you don't want to do ADRs at all, plan to go really early or really late- not peak meal times. You should have a better chance of being seated then.

Definitely if it has characters get ASAP, for anything else the longest I'd wait is two weeks before to at least see on the availibility of the restaurants you were interested in.
