You're the only other person I've seen with that tag.
Anyway, I'm not a big fan of veggie lasagna. I'm a purist when it comes to lasagna, I want meat, noodles, cheese and sauce. Nothing else. I suppose if you skipped the meat part and didn't add all of the odd veggies I'd like it but it always seems that the veggies overpower the lasagna flavor when they make a veggie lasagna.
How about a nice pasta salad? Some of those can be fantastic. I'd try to pick something that in it's normal state it doesn't have meat. So pasta salads, potatoes au gratin, rice dishes, regular salads or something like that.
