Do you like veggie lasagna?

I posted before about sending food with my boyfriend when he goes to be with his family for his grandmother's funeral and all. He's a vegetarian and his family isn't- so I'm trying to think of something that would work for everyone. Do those of you who aren't vegetarian like veggie lasagna? Any other suggestions?

I love veggie lasagna...In fact i'm making 2 pans tomorrow and saving one for our Vegeterian guest next month.
Eggpland Parm is another good veggie meal
 
I love Veggie Lasagna. I make it with Alfredo sauce instead of marinara. Darn, now I'm craving some.:rolleyes1
 
I do! My mom makes one with a white sauce. Is that what you are thinking?

Could you do a spinach lasagne?

And yes I like Veggie Lasagna
Oh and remember that you can make regular lasagna without meat- just use a marinara sauce instead of a meat sauce.
 
I'm not a vegetarian but still like veggie lasagna. As long as a dish is tasty, I'll eat it! It doesn't have to have meat in it to be tasty!
 
Honestly with the exception of spinach, I do not like veggie lasagna. I would rather have a meatless sauce lasagna instead of adding veggies. Texture wise it is just odd to eat IMO. Then again I don't care for egplant at all and that is what usually is added..
 
Lol, for those of you who asked-
Yes, it's a new and much better relationship! He's a friend of my roommate, and one day he came over before my roommate got home and we ended up talking until like 2AM . He's a really great guy :). We've been dating for like a month and a half, although it wasn't official for the first couple weeks.

Generally when I make veggie lasagna for me, it's got marinara sauce, cheese, and zucchini. But I could do a alfredo sauce/spiniach version. Hmm...
 
I've had meat-free lasagna with my family/friends several times made different ways. Except for the picky people, most like it very much. :)
 
I love veggie lasagna. Another idea is to do a risotto. Very filling, can easily be snazzed up, and you can use vegetable broth instead of chicken broth.
 
No I don't. What about a Pasta salad? Often people will send a ham and rolls and then you have nothing to eat with it, and sometimes you really don't feel like anything heavy but know you have to eat- that's the way I was with my parents.
 
I normally dislike vegetarian dishes a whole lot, but I recently tried a veggie lasagna and I loved it!

It's very thoughtful of you to try to please everyone like that. Your boyfriend is a lucky guy. :thumbsup2
 
I've been using Morningstar Farms meat substitute. No one guesses there's no meat. I go heavy on sliced mushrooms and onion. Gosh, my girlfriend is vegan and makes this heavenly lasagna using soycheese and wonderful spices. Thanks for reminding me, I need to call her! lol!
 
My family is not vegetarian and we all love the spinach and artichoke lasagna I make. It is done with vegetable broth, alfredo sauce, artichoke hearts and spinach. Yummy!
 
I do a three cheese lasagna for my kids. they love it.

I've done it with the boca meat too.. but, the added flavor wasn't worth the added money.

frankly, my poor kids don't know that most people eat lasagna with meat in it. They were also suprised to find out most chili comes with meat.
 
For my lasagne "meat" sauce, I either use the Litelife Gimme Lean Ground Beef or Morningstar Recipe Crumbles. They're both vegetarian but the meat lovers can't even tell a difference unless you tell them!

I have an awesome recipe if you don't have one already. :upsidedow
 
we love veggie lasagna - and it is one of the things I can serve DH's family that they really love, but they don't feel they are being "subjected" to our vegetarianism!!!;)

my recipe uses fennnel seed to give some of the flavor sausage would - but I sometimes also add Morningstar Farms because my DH likes it that way - I can take or leave the texture ....

Love veggie lasagna. So much so that if choosing between the traditional with meat and veggie, I'd go with the veggie.
 
I like spinach lasagna, but I don't like veggie lasagna with zucchini in it. Or with carrots in it. It just isn't right to me - probably a texture issue.

I don't mind zucchini but agree about the carrots. And no broccoli either. I love broccoli, but not in my lasagna.
