I pull leftover roast chicken or turkey off the bones, mix it with leftover gravy in a casserole dish and spread mashed potatoes over the top instead of a crust. I cheat and use instant potatoes if I'm really in a hurry. It's a little bit healthier, and more filling. I serve corn or green beans on the side because we don't like the gravy to get on the veggies.
 
I make turkey pp's the day after Thanksgiving. I bought a set of dishes just to use for them. I make individual pies using the crust recipe from the apple pie DS and I make every year (only two pie crusts I make all year!). I then load the turkey, maybe some parboiled carrots for good measure and dump in leftover gravy. Yum.

What I have also prepared from Turkey Day leftovers are what I call "dressing patties". I take the leftover dressing, shape it into burger shaped patties and fry it. DH loves these with gravy. Another yummy, although unhealthy, way to use the endless amount of leftovers.
 
I love the Marie Calendar version best. But they are very, very high in fat and I consider them a treat when I have one. But the microwave version with the silver lining on top browns them very nicely and they are heavenly.
