I'm using 2 chopping boards, one wide, thick, wooden chopping board for vegetables and fruits and one rubber-like chopping board for meat.
I have one big plastic one that is used for raw meat. One large wooden one for vegetables. Then I have about 4 small wooden ones that I use when I just need to slice some cheese or cut one onion--basically for a small job. Then I have two more random large wooden cutting boards that I believe must have been DH's before we moved in together.

(ie. when I'm cooking so much freaking food that I need the big guns). A plastic one for meat. A big wooden one for veggies and bread. And a beautiful checkerboard patterned wooden one from Estonia that we got as a wedding gift that lives on the counter for when I just need to quickly slice a piece of fruit or a bagel in the morning.
