Do you have 6 months after graduating to participate in DCP or The culinary program?

So my plans have kinda changed. I'm going to go to culinary school right after graduating HS and when I'm 20 or so I'll come back and attend the CIA (a culinary school). If I graduate the culinary school,don't I have 6 months to join the disney culinary program? If I don't get accepted within that 6 month time frame, is there another way I can participate with disney and experience the DCP experience?

According to this, you still have to be enrolled and taking classes:

The people I knew who were on the culinary program did it as part of their required externship for culinary school.

but if you do it as externship how can you still be enrolled in school? A school I want to go to requires externship but I don't understand how you do that and still be enrolled. You have to take Time off of school in order to docexternships
